文件。他们想否认真实性不是那么容易得。有些东西是从网上直接拷下来得。要是觉得
有版权问题，请跟我联系：） 希望大家都能贡献一下手头得资料，最好有简要说明，
出处。重要得是，要undeniable 。没有很好排版，如果谁能够帮助reorg 一下，那就

作为起头，先用几句话说一下税收的本质是什么。
税收的征收主体是政府，而征收对象是个人或者公司组织。不管什么类型的征收对象，
本质上，用大白话说，就是政府在告诉你：我给你提供了公共服务，公共管理和其他等
等好处，让你可以安居乐业，挣钱发财，颐养天年，你就得给我出钱，- 它是一种交换
关系。这种交换关系平等不平等，值得不值得，本质上就是一个政府的治理水平的好坏
问题。好的政府，可以让你出较少的代价（低税）就可以享受到高质量的服务；而坏的
政府，收你很多买路钱保护费（高税），但仍然搞的国家动荡民不聊生。所以，大家都
愿意往有“好政府”的地方跑，离开“坏政府”的地盘。个人如此，公司组织也是如此
。于是在一个理想情况下，聪明能干的人和公司，慢慢的都会聚集在“好政府”治下，
继而创造更多的财富，继而给政府更多的回报来提供更好的公共服务，形成良性循环，
稳定的延续下去。

易懂的菜谱“The Joy of Cooking"
我刚学做西式菜的时候，很多词汇对不上号。经常是自作聪明搞substitute.然后弄出
一锅四不象。后来我的美国朋友推荐了“The Joy of Cooking". 这部菜谱最早出版于
1930's.到现在已再版了不知多少次。2006 年，这书又经过一次修改和更新。这本书不
仅收录了菜谱，而且详细的介绍各种cooking terminology. It is very helpful if
you are starting from "ground zero".
我买了这本书之后，成功的做了carrot bread, zuchinni bread, brownie, wheat
bran muffins, artichoke, brussel sprouts。。。
希望有兴趣学习西式烹饪的朋友们能从中受益。

上学到的。
正经的原料应该使用隔天的烤羊肉，但是家里不怎么吃羊，我就用新鲜牛肉馅做，更方
便。
材料：
1 1/2 lb 土豆
1 tbsp parsley
1 oz butter
6 tbsp milk
2 tbsp vege oil/olive oil
1 lb minced beef
1 carrot chopped
1 celery stalk chopped
1 onion chopped
1 tbsp thyme
1/2 cup red wine
1/2 cup meat/vege stock or gravy
2 tbsp tomato puree
salt and black pepper
做法：
（烤箱预热400F）
1.土豆煮15分钟，压成豆泥，加盐、黄油、牛奶、parsley和胡椒，拌成creamy。
2.把切好的菜炒熟
3.把肉炒熟，加红酒（家里没有，我放到料酒和醋。。），把刚才超好的菜倒回来混合

Put a banana or a 熟透了的西红柿 into a bag with these 青西红柿,
they will turn red very quickly...
Otherwise, make stew with meat, or stir fry with other veggies
will be good too...
or you can mix some oil and seasoning, and then bake with
potato, carrots etc... |

chuck roast我一般是这么做的。
beef，不用切，表面sear一下，或者叫brown一下。
大锅，我用cast iron的dutch oven，先放肉，
上面盖onion，少量carrot和celery，加red wine，
调料用salt，pepper，几片bay leaves，不放也行。
慢火simmer至少4小时，等汤汁基本收干就行了。
也可以在还有些汤汁的时候加土豆。 |

fry.
if you dont want to cut it. just add smashed onion,celery and carrot,covered
by a chicken and mushroom soup and bake it. |
