一种自选的快餐，问我要什么，我看有corn bread的选项，就要了corn bread。因为我
好奇此款面包的味道，我从来没有吃过corn bread。
人就是这样: 没有尝试过的东西，总是对陌生东西充满莫名的好奇。也许你可以将此理
解为探险精神。今天做了一次corn bread，可能以后在外面吃饭，我不会点外面的corn
bread了，因为我做的味道比以前外面吃到的好太多。那就是纯正的自然的味道：玉米
粒、玉米粉。
味道特点：咸肉的味道又甜又咸，有点像国内的甜香肠。玉米粒的味道比单吃那种嫩玉
米棒好。我喜欢吃老玉米，所以这次经过烤制的嫩玉米比较象老玉米。
原料：coarse cornmeal 6 ounces buttermilk 16 ounces

所以价钱也不是很贵。
corn gluten/corn meal 抑制发芽是个 Mythy.
据说是对 POA 类的草有抑制发芽的作用。但是我还没有听说很确切的验证。
用来除某些霉菌的感染倒是很常见，例如 yellow patch 什么的。
这个东四撒到地里会鼓励某种特定的霉菌，把其他的霉菌给压下去了。
这个东西给牲畜买的还不好找，我这里的马场不卖这个，据说是和气候
有关，太热了，不适宜吃这个。反正我是没有找到。以前找 crack corn
自己用 blander 来打撒到地里对付 yellow patch. 好像还有点效果。
给人吃的 corn meal 就贵多了。老莫特喜欢用这个。

发帖数: 2893 | 19 说起这个酱牛肉还是上次聚会时一个朋友介绍给大家的呢。当时就得到大家的一致好评
。这个牛肉有一个特定的名字叫corned beef，在我这里wal-mart就有卖，1.96$每磅，
是用塑料袋封起来的，一面是深红色，里面还有类似胡椒样子的香料袋。这个corned
beef不知道美国其它城市的wal-mart有没有卖，国内就更不晓得了。买不到的朋友没关
系，我会提供两种配方的。
corneded beef版
原料：
1、corned beef 一袋（一般是6$多）
2、葱、姜、花椒、大料（八角）、糖、酱油（老抽）
步骤：
1、取出袋中牛肉，一般是一大块，这牛肉是已经淹好的，带有一定咸味和香料味。把
牛肉表面洗干净，剃掉表面肥肉。男同胞们要是不介意肥肉可以不剃。把处理好的牛肉
切成2~3大块。
2、牛肉入高压锅，放入大葱一节（大约3寸长）、八角一朵、花椒5粒、糖5小勺（不喜
欢甜的朋友可以不放，但个人感觉放了味道比较好）、老抽酱油两大勺。放入清水（凉
水）快要没过牛肉即可。
3、盖锅等高压锅上气，压20分钟。
4、打开锅盖，调入味精，把汤煮到快干即可。
5、取出牛肉放凉，如冰箱冷藏一夜，待牛 |

发帖数: 1371 | 24 昨天上午爬到mt sherman山顶，滑雪下来。基本上可以从山顶一直滑到TH，而且13000
尺以上的地方有corn snow，滑起来非常爽。
先简要的叙述一下流水帐：
前天晚上到离TH不远的fourmile campground，睡了个霸王觉（没给钱）。
昨天早晨6点的样子从TH出发，雪地被冻得比较硬，不需要snowshoes之类。
9点半的样子爬到顶，接近3000尺的高度，4mile单程。在雪坡上某些陡一点的地方
traction device应该有帮助。
10点过开始滑雪下来，雪况还行，上面的corn滑起来很爽，低一点的地方雪开始化了，
也不算很糟糕，更低的地方雪化成了稀泥状，不过反正基本上是平地也无所谓。一个小
时的样子到底，如果不是个别地方需要扛着雪板走过去的话可以更快。
顺便再说说：
昨天上午开始爬的时候，只有一组人去的比我早，而且他们不是爬的sherman，爬山过
程中一个人都没见到，是真正意义上的solo，只有滑到快到底的时候才遇到了一些游客
状的人。早出发非常重要，上个月从james peak上滑下来的时候，都下午两三点了，完

者HFCS 55（55%果糖）混起来使用。
果糖完全可以在健康人体的肝脏中代谢掉，除非患有Fructose intolerance或
Essential fructosuria之类的代谢疾病。“产生很多废物”具体是什么呢？
传统蔗糖进入体内也是首先要被分解为果糖和葡萄糖之后，才分别代谢的。果糖进入肝
脏细胞后会很快磷酸化，然后转变成葡萄糖，再重新进入循环系统。
从甜度方面来说，蔗糖的甜度是1，葡萄糖是0.8，果糖是1.7。那么为了达到相同的甜
度，果糖使用量应该比纯蔗糖或者葡萄糖少。
自从引入corn syrup后，是有很多与肥胖或者糖尿病相关的研究。但是反思一下，是纯
粹因为果糖的原因呢，还是这些人群本身就嗜甜，从而摄入过多的热量。目前还没有研
究定论，摄入果糖比蔗糖更容易引起肥胖。
糖分过多的食物是对健康不好，但是我并不认同果糖的“毒害”作用。或者说，每天到

这个大概是最简单的烘焙了吧，不用打发什么，基本就是混合而已。还没买合适的蛋糕
模，cookie cutter也还没寄到，所以决定先做个这个玩，刚好家里有lodge10寸的
skillet~~
方子来自JOC~~哈哈，有些材料没有，所以挑了最简单的一个corn bread方子。
1又1/4 cup corn meal
3/4cup all purpose flour
2又1/2 tsp baking powder
1 to 4 tbsp sugar（我加了一勺，不喜欢太甜，而且我后面用炼乳加水替代了牛奶）
3/4 tsp salt
把上述材料在一个大碗里面搅拌均匀，再加入：
一到两个鸡蛋（我加了两个）
2 to 3 tbsp melted butter
1 cup milk（没牛奶了，用炼乳加水对付的）
所有材料加入后混合均匀
把铸铁锅里面涂上黄油，放入烤箱425F预热，拿出热锅，导入混合好的面糊，16到18分
钟即可
不会拍照，大家凑合着看看啊~~哈哈 |
