noodles就放在海鲜柜旁边，和排骨，猪肉的放在一起。不过不一定每天都有，周末应
该会有。university上的双和我不常去，你如果想买质量好的牛腩那还是多开几mile吧 |

一点点肥，照我妈的买法，早点去菜场，一大块牛腩只挑“头刀肉”。。。这里不那么

青椒炒牛肉丝做法：
1.青椒去籽切成丝；
2.牛肉拌上酒1大匙、酱油1大匙、生粉1小匙、胡椒少量的调料，腌味10分钟；
3.锅中放入油，加热后下牛肉炒至变色，加入青椒丝、蚝油炒匀即可。
芹菜炒牛肉丝做法:
1.将牛肉洗净，切成细丝，用水淀粉挂好浆；芹菜去叶、根，洗净，切成5厘米长的段
，用沸水焯一下，立即用漏勺捞出，用冷水冲凉，待用；将淀粉加水适量调匀成水淀粉
待用。
2.旺火热勺，注油，烧至四成热，放入肉丝，用筷子拨散，约炒10分钟，倒入漏勺，沥
净油，待用。
3.原勺，留底油，烧至四成热，下芹菜翻炒片刻，随即放入料酒、酱油、味精、牛肉汤
，烧开，水淀粉勾芡，倒入牛肉丝，淋少许豆油，用炒勺颠翻炒匀后出勺，装盘即成。
爆炒牛肉丝做法:
1.烧热1.5杯油，放入牛肉丝大火炸1-2分钟，沥干油分，再烧热1杯新油，将牛油再炸
至干身，沥去油分；

分歧的问题上没有达成共识之前，你只能陈述你这一面的故事，下不了结论。其他局外
人也下不了结论。不过的确一些便宜点的cut的牛肉如果没有浆好，是可以吃起来像猪
肉的，需要浆得很有技巧，才能很嫩口感很好。总之酱肉这活是很有技巧的。我要是你
我会在这个问题上跟饭店刨根问底。我相信在你向饭店反映之后，厨师会收到你的反馈
，会去解决这个问题，换牛肉的cut也好，摸索别的桨法也好，或者重新核算成本考虑
进更贵的牛肉，assume那家饭店在乎他们的生意在乎客人的反馈，而且他们也认为那牛
肉的确不行，他们是不是这样，我就不知道了。。。好的flank steak 5，6块一磅，大
部分中餐馆是用不起的。但有个细节，你说那个菜名叫什么什么牛柳，菜名如果要叫牛
