荐，到英国新殖民地威海卫出任英国政府秘书，1906至1917年出任华务司兼任威海卫南
区行政长官。1919年至1924年进北京给末代皇帝溥仪做英语教师。1927年重回威海卫，
复升任威海卫英国殖民地行政长官。］

香港人現時吃麵包相當普遍，有29%差不多天天吃，但只有13%有關注吃麵包的健康問題
。大家選吃麵包主要是考慮味道、方便、習慣、價格；麵包的來源最多人光顧的是街坊
麵包舖。
麵包的成份之中最值得關注的是油脂的使用：動物油（牛油、豬油及部分人造牛油）及
部分植物油（椰子油和棕櫚油等）含高飽和脂肪及食物膽固醇，多吃對健康不利。其他
植物油也可能在加工過程中氫化，產生逆態脂肪酸，亦危害健康。
本地市面上發售的麵包，部分含有豬油，部分含有其他動物油脂（如牛油）。
商業生產的麵包，都加入了種種添加劑，包括防腐劑、乳化劑、麵糰調整劑、色素、調
味劑等。不同的添加劑可能會令某類人士引起各種不良反應。
香港兒童血液中的膽固醇含量為全球第二高，僅次於芬蘭。雖然他們現時尚未有任何病
徵，但這大大增加了他們長大後患上心臟病及中風的危險。根據 Fleming (1997) 的資
料，人體每增加１％的膽固醇含量，患上心臟病的機會便會增加２%。另外，根據香港
衛生署的統計，心臟病已成為香港的第二號殺手，而食物中含有過量的脂肪（特別是飽
和脂肪）及膽固醇是導致心臟病的主要原因。 |
