分穀飼牛肉和草飼牛肉，因脂肪含量之不同，各類牛肉呈現不同風味。
澳洲穀飼牛是當吃草的牛隻體重達一定重量之後，便改以玉米、小麥、大豆、高梁等穀
物來飼養，並且牛隻圍起來，以減少牛隻的活動量。這樣做的好處是牛肉的脂肪含量將
大大提升，以增加牛肉口感，使牛肉變得肥美好吃。而美國牛肉牛隻從小就被圍養，喂
以穀物，這可縮短飼養時間而得到最肥美等級的牛肉。
草飼牛或者是放牧的牛則因有大量的活動，加上所吃的並非穀物或熟食，其肉質精瘦，
幾乎沒有什麼脂肪，但也帶有一股野味。其實除了牛以外，其他家畜也都如此。例如台
灣的土雞和肉雞，土雞肉瘦而結實，而肉雞則較多脂肪。
1940年代美國農人企圖用椰子油來養胖他們的家畜，卻發現反而讓牠們更瘦更有活力及
胃口更好，這是因為椰子油有增加甲狀腺功能的作用。後來他們使用抗甲狀腺藥物，這
才把家畜養胖，不過卻也造成家畜發生癌症。在1940年代後期，人們發現只要以大豆和

本来就是啊。西餐牛排讲究marble，就是肉里面一条一条的肥油花纹。花纹多的就能做
得很嫩。
用里脊做牛排只有尖端那小段可以用，就是filet mignon。能用就是因为这段肉本身很
嫩，油脂少也无妨。里脊其他部分就不行了。
牛排这上面老邱说的还是有道理的。 |
