我烘焙,我一般会照原食谱减少黄油用量。
我第一次看见一个洋人朋友把butter抹到烤面包片吃的时候,真的是有点儿目瞪口呆,
心想,哦,butter原来可以这样吃的。
在知道人造黄油是工业氢化工艺制成以前,如果Butter和人造黄油(Margarine)摆在
面前,我的首选必定是人造黄油;在知道了人造黄油含反式脂肪酸后,在买人造黄油时
我就仔细地看标签上反式脂肪酸含量(这里的食品标签上都会标明各类脂肪酸的含量的
)。最近我买的olivani mono-unsaturated reduced fat spreads 在标签上标有每
100g含0.5g反式脂肪酸。

馅儿料:中火热锅不需要放油。先炒洋葱丁, 放bacon(先绞碎), 再放胡萝卜丁,
最后勾玉米淀粉。一边放等待冷却。因为bacon有味道我没有再放调料。可根据个人喜
好做调整。
小包酥: 不同于派皮和做牛角面包的pastry. 做法比较简单。
外皮: 我用了大概200克all purpose面粉, 70克无盐margarine, 糖粉30克, 盐1/
8teaspone, 水100cc
内皮: cakeflour约100克, 50克无盐margarine.
外皮做法: 面粉过筛围成粉墙(围成一圈)。 中间放糖粉, margarine, 盐, 少量
水。 一手拿面刀,一手搅拌将其混合均匀。 不习惯用面刀也行只要将所有东东混合均
匀就好。 开始时候会比较粘, 继续即可, 最后要揉到面团不粘手, 不粘板, 不粘
面刀就可以了。包上保鲜膜醒约20-30分钟。(我放冰箱醒的, 室温也可以)
内皮做法: 面粉过筛与margarine混合。 揉匀即可。 做成小块状(或圆球状)。 放

成分表。
加拿大这边的食品包装上都有成分表,trans fat和saturated fat是一定在其中的。我
想所谓的反式脂肪酸就是trans fat吧。我看了一下家里的现存的butter和margarine,
margarine我买的时候特地选了比较低卡路里无trans fat的。对照来看,butter却不是
0 trans fat,saturated fat和卡路里就不用说了,都比margarine高。
口感不知道,我很少做糕点,目前为止还没有使用过butter,没有对比没有发言权。我
买butter是煎牛排用的。。。

Once there was this stale tub of margarine that LD was throwing away. I took
it out of the trash, put it in the pellet trap with the opening toward me,
and put a bullseye target in front of it. I shot a single pellet into the
bullseye and next thing I know margarine was flying everywhere. I took away

until smooth
2. add 2 egg + 1/2 cup flour 搅拌2分钟,

4. 发好的面团,取一半擀开12x7inch,放馅在中间,两边各切开12条,辨好。另一半
同样。
5。 放在温暖处,等到再一次发起来,清刷一层蛋黄液。

1 cup butter or margarine, softened
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cups Gold Medal® all-purpose flour
3/4 cup finely chopped nuts
1/4 teaspoon salt
Powdered sugar
1. Heat oven to 400ºF.
2. Mix butter, 1/2 cup powdered sugar and the vanilla in large bowl.
Stir in flour, nuts and salt until dough holds together.

配方:
1/2 cup unsalt butter(1 stick)at room temperature;
1 cup sugar;
2 egg yolks;
1 tablespoon fresh orange juice and grated rind of 1 large orange;
1/2 cup cake flour and 1 cup all purpose flour;
1/2 teaspoon salt;
1 teaspoon baking powder.
做法:
1, 室温融化butter(可以用那个margarine),绝对室温,千万别用微波炉融化的太稀。
然后把室温下软软得butter和糖混合一起,用mixer打得混合在一起,有些蓬松的样子。
2, 加入蛋黄和orange juice, rind, 继续打, 让他们混合一起。
3, 面粉,盐,baking powder,过筛 放进2里面,用筷子和橡皮刀搅,形成一个面团。
面粉可以一半一半的加进去。
4, 用wax paper 包上面团访冰箱里,我用冷冻,快。 |

和私房的lucy学来的,做了黑芝麻馅(白皮)和椰蓉馅(绿皮),馅的方子摘录如下:
黑芝麻馅:
材料:黑芝麻1cup,糖2/3cup or less,中筋面粉或者奶油曲奇饼干1/3cup, lard/
shortening or butter/margarine 1/2cup
做法:黑芝麻炒熟,打碎,饼干打碎,所有材料用手揉搓和匀,放冰箱冷藏,以便有利
于成型。
椰蓉馅:
材料:水1/2cup,糖1/4cup, butter 1/3cup, 椰蓉3/4cup, 糯米粉1/4cup
做法:水烧开,放入糖和黄油,融化后放椰蓉和糯米粉,搅匀成砣后晾凉,放冰箱冷藏
。

我照你的方子做的,用的margarine,直接microwave软化的,就跟油一样了,加到蛋液
里显得更稀了,因为不太够只有3/4cup,又加了1/4cup的植物油,所以真的很稀。所幸
加了面粉和oat以后就变得很稠了。现在正在冰箱里醒着,不知道下午做完会是什么样
子,呵呵
再问一句,在冰箱里放1hr是为了发酵吗?如果时间再长会怎样,会越来越稀还是越来
越稠啊?因为我的面糊看起来比你的稀很多。。。 |

軟化不是融化
不可以用microwave的,一定要室溫慢慢的讓它回溫,知道用手指可以輕易捏動
而且最好不要用margarine代替,人造黃油跟黃油的熔點差很多,制作上會更不容易
有一個軟化的trick,就是用microwave直接加熱到完全融化,就像你做的一樣
然后放到冷凍室里面去凍,凍到黃油剛剛好直接開始凝固就好
這個是差不多5-10分鐘的時間
這樣再用來打發就已經是軟化了的黃油了
用黃油的點心一定不可以用植物油替代
它們在烘烤過程中的效果很不一樣
如果面糊太稀的話,烘烤以后外側會有lace狀的部分,很脆,而且餅干也會變形
這個餅干不是用yeast的
所以放多久都不會發酵
放在冰箱里面是醒面而已,雖然我并不覺得這款餅干需要這個動作
也有可能是因為天氣太熱,所以想要面比較硬一些
這樣可以讓烘烤前的整形更容易
也比較不容易粘手 |
