这次转战了一家店，就是Trader Joe's，看看这里有啥好东西。
结果真在劳动节发现了几款好东西。
我发现大多数中国人喜欢high-moister, semi-soft, 口味淡的ｃｈｅｅｓｅ
所以隆重推荐三种：一种cooking cheese,一种table cheese,一种dessert cheese
首先说ｃｏｏｋｉｎｇ ｃｈｅｅｓｅ，就是羊奶制成的Chevre,味道很淡，几乎没有盐
但是有一股淡淡的“羊油味”。山羊奶制成。
很多fitness的杂志，都论证过，山羊奶是比牛奶更好的奶源。过敏反应少，不会涨气。
以前我很少吃，是因为很贵。但是现在发现trader joe卖得非常便宜，1大条，才3块多
回家发现非常不错！不比欧洲进口的贼贵的差！而且热量低，软，每个serving才80卡
是非常好的cooking cheese

but now after 2 weeks, there are some seeds. considering there are only a
few of these seeds packs, I guess they are not from fescue, otherwise all of
them would give out seeds.
but when I pull out the seeds together with its leaves, the leaves look
quite like fescue.

My recommendation would be this:
1. Do it yourself.
2. Renovate both the front and back yards in the fall, not now.
3. Do a soil test.
4. Do soil drainage and compaction tests.

首先，世界上很难讲哪种食品是“绝对安全”的。面对风险，首要的问题是：风险
有多大？我们有必要冒这个风险吗？比如后面要讲到美国联邦医药食品管理局（FDA）
批准的新药同样有风险。但是，如果我们在服用新药和病痛甚至死亡之间选择，选择服
用新药是显而易见的。转基因食品的风险稍后论述。如果承认转基因食品的风险，那么
，人们有什么迫切的必要去承担食用转基因食品的风险呢？
我们将用三个实例表明：人类长期的、大量的实践是最可靠的检验。人类作为整体

topping都拿出来做这个everything bagel。 还在面团里面加了蔓越莓干和核桃仁，反
正能用上的都用上
方子以前在这里发过不知道还有没有了，再发一次：
这是来自亚瑟王面粉（king Arthur）网站上的，稍微改动了下。用了海绵胶头来做，
就是将面粉和水以及少量的酵母混合放置16个小时以上，已经成为蜂窝状后加入其它配
料中。个人揣测，这样做成品质地更有劲，更有弹性，不容易老化并且面原始香味会发
扬的更好。（酵母充分发酵）顺便提下亚瑟王的面粉，确实很赞，虽然比其它的贵了不
少。
Starter
1 cup 高筋面粉
1/2 cup 水
1/16 teaspoon 酵母

室温放几天，toaster里烤过都还是很好吃~
方子在这里~
Starter
1 cup 高筋面粉
1/2 cup 水
1/16 teaspoon 酵母
面团
所有starter
1 cup 温水
2 teaspoons 盐
3 1/2 cups 面粉
2 TBSP poppy seed
1 tablespoon 麦芽糖粉或者红糖
1 teaspoons酵母
水浴：一大锅水加一大勺麦芽糖或者白糖
topping： flax seed，sesame seed，poppy seed， 1 egg white
方法一：酵母头配料搅拌均匀加盖放置16个小时候和面团的材料混合好揉大概10分钟左
右至光滑。贝果不讲究揉面出筋，只要揉匀即可。然后放盆中加保鲜膜发酵至体积两倍
大，室温的话一个小时到两个小时不等。此时就可以大锅中烧水加入少许的麦芽糖待用
。（可用白糖代替）。等面团发酵好了，排气，在加入蔓越莓干或者核桃仁（只要和到
面团你就可以了）

发帖数: 2407 | 43 以前做过土耳其面包Ekmek，觉得flat bread也是不错的。这次做的Pide和Ekmek相似，
只是这次外表刷蛋液，而且上面撒了一些籽，所以这款面包的英文名是Turkish seeded
bread pouch. 可惜我没有nigella seeds，只能用黑芝麻籽山寨了。nigella seeds是
黑色的，和黑芝麻外观看起来很相似，只是味道不同。
方子来自“ultimate bread”。
原料：2 tsp yeast
1/2 tsp sugar
300ml water
500g flour
1tsp salt
2tbsp olive oil（家里橄榄油用完了，我只能用菜籽油代替）
蛋液：一个鸡蛋+1tbsp 水。
2 tsp nigella seeds（我用黑芝麻代替）
将酵母和糖溶于125ml的水中。静置5分钟。
将面粉和盐混合均匀，中间挖一个洞，将酵母水倒入，搅拌，再倒入剩下的175ml水和
两大匙油。
揉成面团。
第一次发酵到两倍大，耗时约一个小时多。
拍扁面团，静置10分钟。
整形：将面团等分两份，各自整形成圆形，然后擀成２５厘米直径长的圆形饼皮，厚约
５毫米。

你new 一个Random 的时候，如果带的seed参数一样，
每次的结果应该都是一样的，我觉得应该是平台无关。
如果new 一个Random不带参数，自动用当前的时间做seed.
public Random() { this(System.currentTimeMillis()); }
所以你取得什么结果，取决于你的seed.如果不带seed,
取决于你运行的时间。 |

I did it with and without top dressing before. It has both pros
and cons.
Pros:
- Easy, not need to buy top soil.
- No contamination like weeds from the soil/hay.
Cons:
- Seeds are easy to move/float. If you have water form puddle, the
seeds will gather on the puddle.
- Birds pick it up easier.
- Seeds get roots into the soil slower. You need much more careful
on the watering. Can't cut off water as early as top dress. Too
much water will move the seed.
