A. 5寸半Shun hollow-ground Santoku
B. 十八子切片刀(vegetable cleaver)
这把十八子是在99超市买的，买的原因是我拆开摸刀刃的时候，居然把手都给摸破了
个口子。 以前在Macy's摸双立人的vege cleaver都没摸破手。。。
这把十八子拿出来其实感觉也非常精致，这把是切片刀，比文武刀（前切后斩）轻不少，
感觉和我家现在的菜刀差不多重（那把文武刀我也试了试，相当的重）。这把切片刀
说明书要求也是不能剁骨头的。
两把刀都是新拆封，第一次用，所以也算公平较量。当然这两把都不是各自家的顶级
货，两家都有更好的钢材做的产品，但是性价比肯定不如这两把了。。
【测试项目】
1中式香肠，2半解冻猪肉，3土豆丝，4豆腐干
1 先弄了两根广式香肠试了试，这东西算比较硬的，两把刀的区别立刻就出来了，十八子
感觉比我以前磨快了的菜刀快不了太多，Shun基本像切豆腐，可以切得非常薄。
2 然后切半解冻猪肉，基本同样效果，推刀的阻力感觉至少差一倍，Shun可以切非常非常
的薄，基本用过Shun就不再想换回来了。我没有刻意去切很薄，很快就切了一盘... 阅读全帖 |

历经十载，风光确实不比当年。

30度角以后切菜跟玩儿似的。
440钢差不多是最便宜的又坚硬又能长久保持刀锋的钢，想偷懒的买它就好了。小心使
用是不需要经常磨的，而且新手也不应该磨刀，只会越磨越坏。那种sharpener什么的
不要用，毁刀的。买个honing rod，没事 切菜前后都照使用方法刮几遍刀，可以保证
刀锋长久不坏。 |

coarse跟extra coarse石头各一块，就可以磨刀了。之后我又买了一块精磨石头1000/
6000目的，加上家里有块放了几年的3000目油石，装备已经远远超过师父了。在
spyderco上磨完以后3000目的石头小心轻磨，最后刃口基本可以当镜子用，就完工了。

先要用60目左右的diamond plate，
把刀竖直，刃口对着plate前后先磨一致
然后再用400目的磨刀石从头做刀刃，磨差不多了再上更高目数的精磨

美国对印度每年的外包类软件和服务类的贸易逆差连续多年都是一年几百亿的金
额，只不过不管那叫逆差。甚至都没人管那叫外贸，更有甚者像各大公司内部印度部门
的研发开支这一类的投入，估计都被算成美国自己的GDP了,真不知道应该叫什么,虽然
从办公大楼水电煤气的基础设施到人员工资和技术投入,都是在印度本土的。而抛开那
些各个大公司在班家罗尔连篇的办公区不说，就说印度自己的外包服务公司拿到的单子
就是一年几百亿美元。印度还在疯狂贬值其货币。算上硅谷各大公司内部研发在印度的
投入，那应该是一年上千亿美元的规模了。而这产值还是信息流，绿色环保，不需要能
源运输和污染。
可是中国的对美所谓顺差里面不但包括所有iphone/ipad产品，还有三星等等，自己的

hallway in second floor can be hardwood. Still prefer carpet in bedroom. I

in bedrooms. Hardwood is much easier.
