我也看到网上有类似的抱怨。
electric radiation cooktop 和induction不一样。那个cooktop本身是发热的对吧?
我开始也迷惑半天。虽然都是玻璃的smoothtop,很有些销售人员浑水摸鱼的意思。

电磁炉跟smooth top是两回事。
听起来你说的不是电磁炉(induction)。
induction效率高,1500瓦都挺热的了。
smooth top要大火炒菜最少要2500w灶头。

I have both gas and induction cook top at home, I must say induction is very
powerful, it can boil a cup of cold tap water in about 8 sec on highest
setting. When I first got this, I tested with a cold pan and 12 cups of cold
tap water, bring to a full boil in just over 90 secs. Also it can turn a
large wok to dull glowing red in less than 1 min with no food in it.
I think any induction cook top with at least 5kw should be enough 火力 for
you. If you need to use a wok, you have to get the curve ki

Actually any cookware that is made of ferrous materials will work just fine.
I even tested with a very cheap pan from dollar store, work as good as
expensive all-clad.

Most nice cookware will have a lable to tell you if it can be used on
induction cooktop or not. I only tried a few cheap one just for testing
purpose, they all seem to work ok. Only the wok I use is from the same
company as the cooktop, all others are bought from store (most of them
online).

不锈钢有很多种,常用防锈好的是300 series,比如18/10,
他们没有磁性,不能用在Induction。有的底下特意加一层
18/0(400 series)的,这个有磁性就可以用了。
便宜的锅可能直接用18/0,但他们防锈性不好。

也发热,但热的轻。特别是铝或者铜,因为电阻低。
不锈钢好一些。
有磁性的还有别的发热机理(磁场变化产生电阻)。

我家的也是电的,像玻璃一样的平面。但是我家的叫electric radiation cooktop. 当
时就是听朋友说这种好清理,现在有点后悔没用煤气的。这种的火力还不如我以前住公
寓的电阻丝那种ranch。而且坐完饭马上要搽,否则上面的残渣到下顿再烧一下子后特
别难搽。而且只能用底非常平的锅。我还是建议煤气,火力大,对锅的要求不高。

It is a iron/steel wok. The color of the metal will glow red when heated, I
usually stop at dull red and pour in the cooking oil (it will instantly
smoke, sometime even lit). The red glow should be about the same as you see
on a hot iron that I just take out of fire to brand my steak. After I put in
the oil, I add the food to the wok within 1 sec, the food will "jump" from
the heat, most of the dishes can be cooked within 1 min. Does that all make
sense to you?

I made a DIY gas wok burner using a less than $150 part. It is at least 120,
000 BTU. I think this is much better than the most powerful $1.5K electric
cooktop you can buy.

Actually I am not that 胆子大, it is just carefully planned. I have built a
big SS hood that completely surround the cooking area. Very little smoke and
smell will escape from the kitchen area. I was taught that a little fire (
flame) inside the wok will add flavor to the dish you are cooking, plus it
is kind of a show when I try to impress my guests (a lot of them are
potential clients).
It is kind of sad that most chinese people now (not just in US) do not learn
the very basic traditional cooking

Are you sure, not only do I have a very powerful vent, I have sprinkler
system in house (halon system in my computer and electronic room). The
kitchen have firewalls built in, even it burn down, should not affect the
rest of the house (it is on seperate HVAC system, so smoke will not
circulate to the other part of the house). My house is designed to pass even
the commercial code. On my last christmas party, I had the local fire chief
in my house watch me cook Real Chinese Food.

Don't know where you live, but in North America, the high leg delta system
allows single-phase 120 V loads and 240 V three-phase loads both to be
served by the same three-phase, four-wire distribution system.
The cooktek induction wok serve international market, so you have to order
one that will work with your local utility.

center tap 成两个120V供普通电器。直接用供用电大件。
你看下你的electric range, dryer, AC说明就看到了,
都是要single phase 240V。
