肯定不是正宗的泰式pad thai
但是绝对是正宗的American pad thai!!!
干pad thai粉 温水泡上
蒜切碎，葱切段
胡萝卜切丝 绿豆芽洗净
鸡肉切丝
一个鸡蛋
鱼露 （我没有，就用 海鲜酱 蚝油 代替） 生抽 糖 辣椒酱
热油爆香蒜碎 煸炒鸡肉至变色
这时候粉应该已经半软了 控水放锅里煸炒至柔软又不失筋道的程度
（如果总是不够软 可以稍微加点水）
粉基本好了之后下面的动作就要快 以免粉煮过头
迅速按自己口味加入调料 拌匀 把粉拨到一边 放一个鸡蛋在锅里炒熟
然后放胡萝卜 豆芽 葱段
所有东西拌匀 出国
上面再撒一点花生碎就更好啦

近些时候在练习小提曲Meditation From Thais，初练时在网上找了Meditation 的乐曲
理解和youtube上的录像。Meditation，沉思，冥想。似懂非懂地知道了主题，乐曲结
构和变化，却是没有灵魂的沉思。
今天因为一些感触，又在youtube搜了一通Meditation，现在的理解就完全不同了。把
乐曲理解为Thais的内心斗争与超越，乐曲还是歌剧里的乐曲。把主角代换成自己，去
亲历乐曲中的起伏波动了，乐曲才成为自己的乐曲。冥想是每个人都可以有的，这首乐
曲因此也就特别容易引起共鸣。
自己演奏，虽然远没有网上或光盘上找到的高手的演奏高明，却是很好的理解乐曲，及
进一步用音乐理解世界的一种方式。单纯地听，不容易听到那么深入。自己演奏时，每
一个细节都是不能错过的，才会发现自己理解上的问题，领会到细微变化之间的精妙。

DIY Pizza
发面： 普通面粉，酵母，garlic salt, garlic olive oil, diced fresh rosemary(
这是可加可不加，加了味道更重一些）。
Rosemary Chicken Pizza
把面擀成圆饼，撒上一些mozzrela cheese, 重新卷起来，再擀成饼，撒上切好的番茄
，烤过切成丁的鸡丁，artichoke hearts,九层塔叶，最后撒匀mozzrela cheese和切碎
的rosemary,在烤箱烤熟就好。
前几天看杂志，有种thai basil shrimp pizza roll，很吸引人，做来尝尝，竟然不错！
Pizza面擀成圆饼，撒上切好的番茄，用garlic olive oil 炒半成熟的虾仁，九层塔叶
，artichoke hearts，卷起来，最后撒匀mozzerela cheese, 烤熟。

火锅用牛肉，就不用担心牛肉不嫩的问题了。牛肉上撒了点美国超市的辣椒粉
（不用也可），另外切了点有点辣的红辣椒圈，九层塔若干，椰奶，料酒。
sunrise买的河粉。
不知道要不要加鱼露？总觉得泰国餐馆的 drunken noodles的味精味很重。
据说要用Thai basil，反正我也不管，直接用的basil。
感觉还行吧，中式炒法炒过2种，一种自己乱来的，一种杭州街边摊上的，估计LD也吃腻
了，换换口味。煮法LD又不喜欢。还是中式炒法比较累，炒蛋一次，豆芽一次，包菜一次，
肉一次……
云南口味的其实也有3种，一种大救驾炒法，一种卤汁炒法，还有一种我也说不清。
但是……材料买不全，也没研究出来。
如果有酸角醋+鸡丝就好了，又可以做出一种凉拌的。凉拌的云南又有好几种拌法。 |
