图中用同样器皿装香料，方便比较外形差异
1.孜然 Zire 学名：Cuminum cyminum
又名安息茴香或阿拉伯茴香，孜然一名是从维吾尔语Zire/Zira而來的，在欧洲又称欧
莳萝(cuminum)，但怀疑他们其实同科同属，未必同种。
孜然的外型細長而扁，富有特殊濃烈香氣，遇高溫易把香氣逼出，故適合燒烤紅肉。
新疆傳統吃法很簡單，把孜然粉和鹽巴均勻混合後，直接把烤好的羊肉串或涮好的羊肉
片沾著吃。其他地区有時燉大肉也會放些，整體味道中會帶點微妙的不同。
2.小茴香 Fennel 學名：Foeniculum vulgare
和孜然比较起来，型較肥圓，辛香味較淡而多甜。嫩叶就是我们的茴香馅包子饺子的原
材料。
西方多用於魚類烹調，東方則多用於肉類；歐洲也用於鹹的糕餅類，有特殊香氣。在中
亞和南亞是不可或缺的咖哩配方之一。
煮壺紅茶，放些許小茴香進去(若怕味道不出，可用刀背稍稍壓破)再加些冰糖，氤氳繚
