Applying for Schengen visa is pretty straight forward for
people
in UK. I don't think it will be difficult in US. You should

Don't know. The travel guide will say all year round is
good. :)
I guess end of summer (late September) would be good time:
good weather, less tourists.

You
see even the US visa is not difficult to get for the
students residing in Europe.
As to the language problem, you'd better talk to the young
people. Don't worry about that.
Daily French conversation? Everywhere you can find that!!!
Bordeaux could be a good idea. I think the best time could
be the harvest time of grapes, you can even participate in
activities of CAI3 PU2 TAO. But you'd better find a guide
or a contact before.
