ranking 出来,IO会不会不承认呢?

Most likely yes. As long as the evidence is not generated by you, the IOs
somehow treat it as an evidence.
People here have also argued on what ranking to use. Like the unofficial
ranking you mentioned, even for official rankings, they can be based on
different metrics, such as IF, eigenfactor, and on and on, and you can
choose different metrics that give you the best ranking for each of your
journals.
However, some people may also choose to use a single metric in order not to
confuse the IOs. It's all up to you on how you want to trade off between
clarity and highest possible ranking.
Yes. Those criteria are often stated in the editor's review verification
letters. You don't have to get a letter from all the editors, but just a few
that you have reviewed a lot or the good journals.
Also, it's better not to email them with only this question on reviewer
selection criteria, but ask for a review verification letter, and your
lawyer should help you draft such letters.
For some nice editors, they may even agree to expand this review
verification letter to a reference letter. It's up to you how much you want
to ask.
