The lender will verify your employment at the last day of closing. If you
submit the loan application using your current employment and later when the
lender calls your employer and finds you are no longer working there. You
will not get the loan.
One of my buyers just did that without telling me. On the date of closing
they were told the loan got rejected and they have to do cash closing.
