Originally, the Aztecs took the heart of the blue agave plant, cooked it, an
d pressed the juices to make a drink called pulque, a low-alcohol wine. When
the Spanish arrived in the late 1500s, they introduced distillation techniq
ues, and tequila was born. Although, for quite awhile, no one called it that

By 1656, the village of Tequila finally got its name, and so did the drink. |
