animal is not obviously suffering from disease, the meat is no different
from that obtained by hunting. The practice of eating roadkill is legal, and
even encouraged in some jurisdictions, while it is tightly controlled or
restricted in other areas.
But I would only take fresh killed deer and bleed and gut the deer as soon
as you can. As far as I know it is legal to eat them in WV (a friend of mine
had a party serving the deer as main course), several of us questioned
about legal issue, we found online that state code §20-2-4 said is legal to
take home and eat roadkill.
I know it is not legal to take home or eat in WI (you will get a ticket),
this happen to come up during our search.

So you need to check the local laws (in both states where you pick up the
deer and you plan to eat it)
You should also consider getting a few books on this subject if you have
never done this sort of things before.
