我同事给我一个很好的腌黄瓜菜谱,他父母原先的餐馆里就是这样做的。我照着做出来
,吃过的人都被惊艳到。 我上次还试着加了紫苏叶,我自己很喜欢,不过紫苏不是每
个人都喜欢的。
2-3 Medium Cucumbers
7-10 Dried Shiitake Mushrooms (or other desired dried mushroom)
¼ cup Salt
Sugar
Rice Wine or White Vinegar
Dried Chili Flakes
1. Take 7-10 dried Shiitake mushrooms and allow them to rehydrate in hot
water. (Depending on the mushroom, this can take 20 – 90 minutes.) Once the
mushrooms are rehydrated and tender to the touch, wash thoroughly, cut off
the stems and slice them to desired thickness.
2. Slice the cucumbers length wise to produce two halves. For each half,
slice the cucumber down the length, and then make diagonal transverse cuts.
(For larger cucumbers, the halves from (2)can be cut 3 to 4 times to desired
thickness before proceeding (3).
3. Mix the cucumber slices with liberal amounts of salt (1/4-1/3 of a cup
) and allow the slices to sit for 30-45 minutes. Afterwards drain the water
that has been leached from the cucumber.
4. In a separate bowl, mix the vinegar and sugar together in a 1:1 ratio
and microwave at short intervals to ensure all the sugar has gone into
solution. Prepare enough to just cover the cucumbers and mushrooms.
5. Mix together the mushrooms, chili flakes (your discretion as to how
spicy you want it), cucumber, and sugar/vinegar solution. Allow the
cucumbers to sit overnight in the fridge. The pickled cucumber is good for
several weeks.
