其实四川的盐水鸭,也是南京传过去的做法,腌鸭子的办法也是一个南京的同学教的,
不过四川人爱吃麻味,少少有些改动,味道也很不错
1. 我用了1/2只鸭子,剪刀去腹腔底部的油脂块,洗净用papertowel擦干
2. 目测两tbsp以上份量的kosher coarse salt,加大约30粒大红袍花椒,入铁锅中小
活力焙炒到粗盐的颜色稍微变微黄。关火,等盐不太烫手了,把盐和花椒均匀第给鸭子
里里外外抹上。然后用保鲜膜包好鸭子,放在一个大方烤盘里,冷藏24小时
3. 第二天取出鸭子,冲洗干净外面剩下的盐和花椒粒。取大汤锅,装足够的凉水足以
淹没过鸭子1寸高的份量,下鸭子,一个八角,一小片香叶(bay leaf),一小勺茴香
子,两粒冰糖,适量的盐,开中火煮沸,再开盖煮约20-25分钟(看鸭子大小咯),然

是我根据silver spoon上的一个配方做的
一只整鸡,brine隔夜(参看前面帖子哈),我brine盐水里还加了brown suger,白葡
萄酒,少量白酒醋。brine了以后擦干净,用风扇或者冷风吹风,把皮吹一吹,再用勺
子从开口的地方伸进去,慢慢推,让皮肉分离
一个大苹果,菜谱里说granny smith,之类,酸甜味道的。用擦丝工具擦成苹果泥,然
后从鸡脖子那个切口塞进去,均匀塞在皮下即可。
用麻绳把鸡翅膀鸡腿栓一起,鸡成椭球状。表面撒少量coarse kosher salt,少许
coarsly ground pepper, 刷一点橄榄油。
烤箱预热350F-375F区间(看你家烤箱实际情况,我比较倾向温度低些哈),鸡进去烤
35min左右(具体时间呢,我有一点点不记得了)。紫苏说的用烤火鸡那种架子烤的法
子很好。我家没有那种烤盘,就用一个比较深的方盘,上面放了一个mini bbq 架子,
架上鸡开烤,这样油都滴下来,鸡肉成品就清爽些。烤中间得翻一次面。
烤好的整鸡,拿出来室温放置,10-15min,切件,摆盘,配点水煮蔬菜吃。

工作的炊具
黄色灯笼甜椒1-2个,进烤箱broil,到灯笼椒变软,表面那层皮起泡,和果肉分离的状
态,取出来稍稍放凉,把最外面那层薄薄的表皮撕掉不要。然后把灯笼椒破开,去籽去
瓤,再改切1cm宽的条。
番茄一个,去皮,切小方块儿。
鸡肉,改切大块,我这儿用的带皮整鸡,我觉得本版的同学可以用鸡胸肉,或者
chicken
tender,甚至去皮鸡腿肉来做都可以的。
skillet里面用paper towel抹一层薄薄的橄榄油,下两粒蒜,中火煸出蒜香,然后扔掉
蒜粒不要。鸡肉下锅煎,每面3-5分钟,煎到外表微黄。这时候撒kosher salt和少量
coarsely ground pepper调味。
烤箱预热350F
然后下黄灯笼椒,蕃茄,半cup白葡萄酒或者清水,加热到液体沸腾,然后加盖,预热
过的烤箱里25分钟-30分钟。这个菜吃起来有一种水果香,如果把yellow bell pepper
换成红灯笼椒,又是另外一种味道,也很鲜,both都好吃! |

Ezeliel bread (aka sprouted grain bread or flourless bread) is available at
Trader Joe's. They are made from sprouted (发芽) whole grains (wheat, barley
, lentil). Overall nutrition composition is comparable to whole wheat bread
with slightly less carb and more protein. They have a dense and coarse
texture close to pumpernickel. I just tried it recently. With a smear of
Nutella, it tastes pretty good.

their ss10 collection. Those loose ends add a coarse feeling to the fine
geometry , the contradiction is sexy as the weakpoint of a carefully woven
conspiracy. I only wish they could make me a one-size-down dress. this one
is already size 0 and it would be too miserable to miss this piece of art in
the spectacular ss10 collection.
