人生第一次做馒头是一个月前,为了做出正宗的北方大馒头,特意在网上找了好多北方
做法的方子。结果可能一是因为口味不习惯,二是第一次做还没找着感觉,做出来的效
果就不好。后来总结失败经验,另外搜了几个广式点心里的馒头做法,才发现自己的口味根本就不忠于正宗北方口味,还是喜欢广式点心的偏甜、奶味偏重的馒头口味~~~
不过最后终于找到了适合自己口味和段数的馒头做法——牛奶馒头!虽然外观看起来还是瑕疵很多啊,不过内部组织绝对达到了自己想要的效果!吃起来就跟在广式茶楼吃的... 阅读全帖

Meat filling (you can use any kind of meat & cook it the way you like)
- 1 lb ground lamb
- 1 whole garlic
- 1 tbsp oil
- 1 tbsp cooking wine

俺从小的时候就觉得蒸馒头花卷以及一切牵扯发酵的面食,那都是高级别的神秘内容,
非老妈姥姥以及国家级烹饪大师之外凡人之不可能完成的任务。(大家鄙视我好了。。)
然而,今天,俺终于跨过人生中的重要一步,第一次用dry yeast发酵就实验成功!一口
气连着实验了三种产品,成果非常喜人,特来跟大家分享一下。
关键中的关键就是dough的制作了。我用的是高精bread flour。因为之前看到说这边的
dry yease和国内的不太一样,在发酵的过程中需要更多的营养成分,因此我是用牛奶
来溶解yeast的。同时温度也很重要,一般在40摄氏度左右yeast活性最强。所以在加
yeast之前牛奶先要在微波炉里转一下加热。之后就逐量加入到面粉中和匀,反复揉搓
,直到面团不再粘手。保鲜膜或者湿布覆盖静放两个钟头,等到dough膨胀到原来大小
的两倍就可以进行下一步的操作了。
花卷的制作也很简单。把醒好的dough摊开成一张薄饼,上面涂上少量橄榄油,再撒上少量
五香粉,盐和葱花即可。国内老妈做会放一种叫做苦豆的东东,蒸出来非常香,颜色也好看。
然后从一段卷起成长棒状,依次切成小块。其实拧花卷满有讲究的,

你去了超市直接问店员哪里有cookie dough,他们会告诉你,你挑一个买就好。
instructions包装上都有,基本就是揉揉擀擀cut成形,按照温度时间指示烤就好。
家用烤箱可能温度会比显示的高一些,烤的时候时间快到了要看一下,以防烤过。

这个小餐包做法非常简单,口感和北海道牛奶土司有点点相似,拉丝的效果也很好,我
在做面团的时候启动了Dough做了两遍,面包新鲜的吃非常宣软,冷冻了拿出来用微波
炉解冻再打一分钟还是一样的好味道,推荐给喜欢用面包机做面包的TX。
A 1杯水,1个鸡蛋,2大勺橄榄油,

其实呢,这个做好的dough是超市里放在靠近酸奶的地方的,一个小小的圆柱形的东西
,<$2/个,可以做8个牛角包。拆
的时候还是很有技术的,沿着标记撕开筒身,撕的好的话斯到一半轻轻的砰的一声
dough就出来了,否则要用刀用勺子撬
开。
里面的dough是已经裁成三角形的,稍微扯一扯,放根小熏肠卷起来,375F 15分钟就
okay拉!

to make dough for 馒头

turn the machine on, 1 and half hour later, dough is ready.

Just freeze the dough.
Next time you want to make another batch pull it out and put it on your
counter for a while until it is almost near room temperature.
Mix some new flour and water and whatever with the existing dough to
make bread or whatever.
I did this all the time.
Actually the frozen dough gives more flavor for your next batch.

刚买到面包机的时候,我是各种面粉的区别都不知道的。所以,我从最基本的写起吧。
面粉主要分成3类:高筋、中筋和低筋。
高筋面粉里面的蛋白质含量比较高,适合做面包和pizza。一般蛋白质有12g/100g(11-
12%)。
中筋面粉适合做饺子、包子、馒头,叫plain flour。
低筋面试适合做饼干和蛋糕,超市里一般叫plain flour for cake and biscuit. 低筋
面粉找不到也可以自己配,中筋面粉和玉米粉corn flour的比例是7:3。也有种配法是
1:4。
超市里还有卖self-raising flour,是自发面粉,可以用来做muffin和其他比较粗的蛋
糕。还有bread mix,里面已经是帮你预先混合了高筋面粉、糖、盐什么的。还有cake
mix和cookie mix,也是帮你预先混合好的,都是懒人配方。
计量一般用到的是g和ml。还有杯cup(250ml),茶匙teaspoon(5ml)和汤匙
tablespoon(20ml),买现成的量器和称就可以了.

(1) you should use 2/3 of catdd's recipe for a normal 9 inch loaf pan. Egg
amount is not important. You can get the same result with 0 egg or 4 eggs.
Egg provides additional rise but it is not really necessary if you have
effective yeast.
IMO Egg only helps when you really want extra amount of rise but if you
leave yeast dough for too long to achieve the same amount of rise the dough
may develop some sour taste. Egg only rise during baking with heat.

今天尝试做了, 用的楼主的方子一半的量, 面包机揉面。
一开始将除了蔓越梅和cream cheese之外的东西扔面包机里(用的costco买的大包all
purpose粉), 开dough程序。 我家机器的这个程序是搅拌五分钟, 停五分钟, 再搅
拌二十分钟, 之后发酵一个小时。
开动程序五分钟后, 我看成团了,就把cream cheese加了进去。 程序跑了三十分钟后
一看, 还没出薄膜, 于是重新开始run dough程序。 再一次三十分钟后, 感觉差不
多了, 就让其继续发酵一个小时。
发酵完加了蔓越莓干, 再次run dough程序, run了20分钟后一看, 又软又粘, 完全
没办法整形, 只好加了些面粉,又揉了五分钟, 还是很湿, 勉强分成四大块放烤盘
上二次发酵。 四十分钟后开烤, 360度13分钟。
最后果然是湿润柔软, 口感比较像中国店买的那种软软的面包。 闻着奶香浓郁, 吃
倒是不太觉得。 甜味我觉得正好, 因为蔓越莓比较甜。下次我会在一开始少放点牛奶
试试, 这一次软趴趴的样子实在是不好弄。

用的是foodnetwork这个方子:

先放烤炉里面稍微烘烤一下,我用的是我家的countertop toast oven,小小的,做这种准

1/2 pound (2 sticks) unsalted butter,放到室温软化

把这3样放一块,搅拌均匀,
然后再加2鸡蛋,一次加一个,然后再加2 teaspoons vanilla extract.然后再搅拌均匀.

Yeast: 1.5 tea spoon.
Sugar: 0.75 cup

谢谢两位的回复。我用的方子确实没有加heavy whipping cream之类的东西,就是牛奶
、面包粉、yeast,butter的基本配方,请问这种cream会是拉丝面包的必需品吗?
我的面包机dough档需要30分钟,每完成一次dough,我会让面团醒个10来分钟,并查看
面团的状态。由拉出厚膜,到易破的膜,到有韧性的薄膜,确实需要3次程序,2个小时
,真没有搅拌过度。
我也试过一次汤种面包,面团非常湿,整形特别粘手,最后烤好的面包很软,也还是不
拉丝(只经历了一次dough的程序)。

若是里面很大不均匀的孔,吃起来就感觉劲道。
Artisan bread追求的就是这个劲道了。
一般来说想要形成大孔,需要gluten高的flour,就是bread flour,尽量减少fat和
sugar,甚至不加任何的fat和sugar,需要长时间发酵,一般的做法是用一个old dough
,在发酵过程中减少yeast量,拉长发酵时间。不少人是将dough放在fridge里过夜或者
过几夜,拿出来放置常温,就可以以一般方式整形进oven了。
东亚人(中日韩)大多不习惯gluten高的面食,更习惯像中国馒头一样的均匀细嫩的口
感。更接近于cake。美国的所谓sandwich bread就很接近这个口感,采用的法子是加多
fat和sugar,加鸡蛋。通常store-bought的sandwich bread里面采用的是大量添加
dough conditioner。你看日本店铺里卖的bread也好cake也好,外形均匀透彻,是因为
日本的食品化学发达,也就是添加剂加的恰当好处。
但一般来讲这些添加剂可能对身体有害,所以若是追求类似cake口感的做法一般是添加

I have kitchenaid stand mixer. just put 500g flour, 7g yeast activated in warm
280ml water. Let mixer make the dough for 5 minutes. dough stays in the bowl
and Cover with plastic wrap for 1-2 hours. then knit dough again and cut
into small piece for MANTOU
you even do not make your hand dirty. quick and neat, the bowl is also very
clean. hehe.

蓝星jj做出滴面包跟花一样,偶经常在那饱眼福,你也可以过去请教一哈她。偶系只会
吃不会做:)
这有一个常做的是奶酪面包棍。这个比较简单:
奶酪面包棍儿:
原料:
高筋面粉200克(1杯半)
酵母粉1/2小勺
糖60克(4大勺,可减半)
鸡蛋1个
盐1/8小勺
帕梅善芝士粉2大勺(如果没有,改成奶粉也行)
牛奶80克(1/3杯)
Cream cheese 30克(2大勺室温)
做法:
1:将所有材料(cream cheese 除外)放入面包机,选Dough档,揉面20分钟,暂停;
2:加入cream cheese,再次启动面包机,选Dough档,揉面20分钟,暂停;
3:第三次启动面包机,选Dough档,揉面加发面,1个半小时后发酵成两倍大;
4:将面团放在桌上,擀成厚约1-2cm的方形面片;
5:将面片切成长条形,放入烤盘;
用小烤箱,每次可以切6个面包条:
6:放温暖处,再发酵1个小时左右;
7:烤箱350度预热,烤15-20分钟出炉子
这款面包甜一点好吃。如果不喜欢吃甜的就把糖份减半。

卡式达面包
卡式达酱(custard):
1料:特大蛋黄1个,细白糖1大匙(14克),中筋面粉 (All purpose flour) 2大匙(
20克),牛奶1/3杯(78克);
面包用料:
2料:水2/3杯(158克),细白糖1/4杯(60克),奶粉3大匙(23克),盐1/4茶匙;
3料:中筋面粉 (Allpurpose flour) 2杯;快速发酵粉(Fast Rising Yeast) 1.5茶匙;
4料:黄油(Butter)2大匙(30克)室温软化。
其他:
5料:蛋黄1个加2茶匙水打散备用;
6料:熟芝麻。
注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。以上材料
做8个八字面包。
做法:
先做卡式达酱:
1、将1料放到小碗中混合均匀,放入微波炉中加热15秒,取出搅拌均匀,再加热15秒,
取出再搅拌,看情况再加热10秒,然后10秒左右,至面糊状。盖上保鲜膜冰箱冷藏1小

Ingredients :
600 g
1 teaspoon
1 cup
1/2 cup

Plain wheat flour
Salt
Warm water or milk
Ghee or margarine
Egg
Sugar
Method :
Sift the flour and salt together.
Knead flour, egg, sugar and ghee with water/milk (a little at a time) good
enough to make a moderately soft dough or easy to handle.
Leave for 2-3 hours or overnight.
Divide dough into 8 equal parts.
Shape it into balls.
Flatten each ball with a rolling pin and fold in 1/2 teaspoon ghee.
Roll up dough and twist it into a coil.

勺放在烤盘上,全是拷过程中,油融化、下沉变成圆的。烤盘上每一小块dough的大小要
差不多,间隔一定要大,不然到最后成型,全连在一起了。我估计你的dough太干了。
那手指饼干照片上吓人,自己看没那么吓人,还是挺好吃的,不过黄油不敢多吃,都送
人的了。

我孩子喜欢吃cookie。我每次做的都觉得形状不好看

去超市买那种和好冷藏着的pizza dough
回来自己分坨坨,揉几下擀面杖压成长条,加点腌了的肉末,葱花,花椒和盐
揉成坨坨,压扁,撒点芝麻,两面刷点冷油
不粘锅烧热,把面饼放入两边煎到有点黄了拿出来

今年的感恩节,是我经历的第五个感恩节,也是最开心和踏实幸福的一个。回想过
去的一年,是来美国后最开心的一年。经过如噩梦般的两年多,终于走出了最低谷;值
得感谢的太多太多。
谢谢bf一直一直陪在我身边。无论是我在北卡CPT出了问题,遭遇了车祸,膝盖肿
的老高不能上下楼,和房东经济上的纠纷,回学校funding出了问题,或是在加州大清
早被警察pull over,抑或是小到生活中手多处受伤帮我笨手笨脚的包扎,帮我洗菜切
菜不要我的手沾水,你都一直陪在我身边。有过争执和误会,有过赌气和大哭,磕磕绊
绊的一路走来,却发现不知不觉中,你已经给了我家的温暖和依靠。这对于从小无比恋
家,却又独自在外漂了6、7年的我是何等的弥足珍贵!有时候我会跟你念叨,回想起来
,最最温馨和踏实幸福无忧无虑的竟然是中学时代。其实,后来的那些年,也有过很多

制作方法: pizza dough冷冻的提前两三个小时、冷藏的提前半个到一个小时放室温醒
面, 然后擀成1厘米厚面片,切成小段,每两个小段叠到一起用筷子压一下,待油温合
适了(放油条下去会有大量气泡),下锅炸至金黄。
