多谢啊，写得这么详细。
我们都是用炭火烤的，也不用aluminum foil，烤牛排也从来不腌:)
忘了鸡翅了，哈哈，以前一个四川邻居很会烤鸡翅，感觉要烤得嫩，还保证鸡皮完整，
很困难啊。
羊肉串难烤，深有同感。
我们家基本一周2烤，就烤些鸡翅，羊排什么的
你可以考虑换换烤法，我觉得比较重要的：
1.no aluminum foil！！！否则就成了煎肉。。
2.不要淹肉！！！我知道好多人喜欢淹，我自己也搞过，比如用蜂蜜什么的淹一个晚上
再烤，味道也不错，但不是bbq的味儿。。。吃烤韩国牛仔骨除外。。。
3.盐一定要烤的时候现撒！相信我，通过水渗透进去的味道和通过油渗透进去的味道绝
对不同。。。
4.一定要把油烤出来，比如鸡翅，我一般都用小火烤1个小时，等体积缩小到原来的1/2
左右，才最好吃。。。
5.羊肉串儿比较tricky，一半取决于瘦肉和肥肉的搭配（太瘦就柴，太肥会腻），一半
取决于火候。最好是炭火，实在不行才用明火。如果用明火，一定要用铁签子。。。否
则很难烤得外焦里嫩。我去年让朋友从国内带了一大堆铁签子，但是洗起来狠麻烦 |
