功的女同事推荐黑豆（black bean),相对高蛋白底碳水。昨天去买菜就顺便买了一些，超
市里还有各种各样的干豆，比较了一下营养表，发现这个red kidney beans 也是高蛋
白底碳水，也买了一些回家。晚上图方便，把black beans 和red kidney beans 干豆
子洗洗就直接扔slow cooker里煮了，想着第二天早上起床就有豆粥早餐多美好啊。结
果第二天吃了大概1/4 cup，吃完没多久就觉得胃胀气难受，头昏脑胀，想吐却又吐不
出来，难受死了。还有轻微腹泻。 隐约记得吃paleo diet的童鞋们讨论过豆子煮不好
会有毒，放狗一搜，果然。大多数生的豆子里含有一个刺激肠胃的毒素
Phytohaemagglutinin (PHA),一种lectin， 豆类中red kidney beans含lectin量很高,
5个生豆子的毒素足以让人不舒服.这个毒素要高温煮才能破坏，用slow cooker低温煮
最糟糕，把毒素都释放出来，比生的豆子更毒。浑浑噩噩过了几个小时后才好一点, 晚

到十世纪非洲就有人工种植。所以岛上还是有可能有绿豆的。
绿豆,mung bean，学名Vigna radiata。我读wiki得来的印象是这个东西要想吃得痛快，
一定要人工栽培，而且它人工栽培的历史也很悠久，说明不难。各位如果有耐心，第二
季一定能吃上绿豆凉粉。

原料：
1）Mung Bean Starch，韩国或中国超市有售。
2）水，粉和水的总比例是1：6。
做法：
1)1份粉，用1份凉水调开。
2）再加5份开水进去，中小火，边烧边用勺搅拌。
3）因为后加的是5份开水，所以很快就能搅成透明糊状，熄火，加盖，放冰箱冷藏几小
时。
4）吃之前切条/切丝/切块，酱油麻油拌拌，喜欢吃辣再加点红油。 |

实验成功的请捐偶包子一个^_*
绿豆粉（mung bean starch）在大华99南北干货那儿就有，叫作“沙淋绿豆粉”。先一
份绿豆粉加一份水调成浆，然后再加7份水调匀，所以最后的体积比是1:8。偶一般用电
饭煲带的那个杯子。这个1:8的比例是某前辈高人的经验经过偶的验证，所以尽可放心
。水可以是热水、冷水，但不能用开水！！这个开水偶没有试过，但是想想芡粉加了开
水以后的样子叭……好了，现在把这个石灰水状的混合物一边加热一边搅拌，你不需要
一分钟1000转地搅，但是也绝对不可以偷懒，一定不要停！更不可以中途去潜水、灌水
！！！慢慢地“石灰水”就变得粘稠，还有点淡淡的绿色，最后就像半透明的浆糊……
等到有大泡冒出来一小会儿就可以停止加热和搅拌了，然后室温冷却几个小时，也可以
待会儿放冰箱。不要 |

2013年11月20号，Frederick Sanger 去世了， 享年95岁。Sanger是DNA测序之父，获
得过两次诺贝尔奖， 一个是1958年蛋白测序， 另一个是1980年DNA测序。虽然DNA结构
发现的比蛋白晚， 但毕竟是genetic code，master script。ATCG四个碱基的组合比蛋
白的20个氨基酸的天文数字组合可更容易研究找规律了。人天生就是个好奇的动物，
最喜欢找规律, 尤其喜欢从简单的地方入手，所以围绕DNA的研究在Watson-Crick的碱
基配对这个简单地规律被发现以后，起来的就比蛋白快了很多。其实DNA和蛋白， 就像
