周末我家老二在院子墙角发现四只大老鼠，一只已经死了，另三只半死不活仍苟延残喘
。感谢耗子药！一周前我把新买来的鼠敌撒在了鼠灾严重的阁楼，据说此药鼠吃后不立
马死，而是要等到一周左右才毒发身亡。我对准一只肥头大耳的RAT一铁锨插下去就把

发帖数: 1639 | 31 有一天晚上，俺急于要把已经解冻的catfish nuggets干掉。第一个idea是酸菜鱼片，
但有点吃腻了。于是瞎折腾，竟然折腾出来的一道美味蒸鱼。奔一个~
关于做法，原则上，挪用了剁椒蒸鱼头的做法。只不过，我因材制宜地换了食材。先把
鱼斜片成一片片，入料酒、适量盐、蒸鱼豉油，腌制一会儿。然后取一个碗，开始准备
“砌积木”，层层铺料。
第一层：碗底铺上几片嫩豆腐，2根葱白，一些姜丝。
第二层：铺一层鱼片。
第三层：再铺一层较薄的嫩豆腐。
第四层：葱叶劈开成平面，铺一层。
第五层：再铺一层鱼片。
第六层：铺上一层剁椒。（推荐红翻天牌子的剁椒，味道比较正。）由于剁椒比较
嫌，所以前面在腌制鱼片的时候，盐量不宜太多。
第七层：撒上豆豉，再撒点儿油。（猪油最好；植物油也行。）
蒸锅放水烧开，然后把铺好的鱼碗放进去，大火蒸15分钟就行了。
也许catfish nudgets不是最嫩的鱼的材料。但是我个人觉得还不错，实惠($2+/pound)
，而且catfish nudgets的鱼油含量比catfish鱼片要多，蒸出来口感不错。 |

我的做法基本和你一样，但是不放料酒，总觉得料酒会掩盖鱼的鲜味。也不放糖。
还有，民工告诉俺一个方法叫“虚蒸”，比如你蒸9分钟的鱼可以只蒸6~7分钟，然后关
火焖5分钟，利用余热蒸熟，这样鱼肉就不会硬，会很嫩。
还有我是先放生抽后放热油的，生抽经热油浇过会很香。
小孩子挑食很正常，俺记得俺小时候挑食，我不吃什么，我妈就天天做什么，呵呵，后
来变得能吃的东西都吃了。

过去两周做的菜菜们。。。
京东肉饼
红烧冬瓜
咖喱排骨（进行时）。排骨550g，西红柿1只，胡萝卜2根，土豆4个，紫洋葱半个。
红烧蹄膀。配酸菜鱼片、海米炒包菜、家常小汤吃。
因材制宜的家常小汤：高汤base，胡萝卜丝，紫菜，玉米，青豆，鸡蛋花，金针菇，
turkey meatball，虾仁，海米，蟹柳，葱白，姜片。
酸菜鱼片——用的是Giant买的catfish nuggets。整整一磅都在这道菜里面。2顿（晚
餐+午餐盒）全被吃光光。发现我们家人真是特别能吃呀！
经过2个月的反复试验，终于研究出了堪称perfect的酒酿（醪糟/甜酒）方子。味道很
正，而且程序上简化了。做一次（3磅量）的实际劳动量不过20分钟而已。做出来的效
果嘛，大言不惭一句：敢于小时候市场上卖的那种媲美。
几番实验后，配置了10袋红豆八宝粥。月子中LG只要把它扔进电饭锅，加水慢慢熬即可
。但愿天天可以喝到粥。。。去年在Amazon跳的那个sanyo电饭煲实在是太赞了。一个
好的电饭煲真是家庭美食的好帮手啊。
上周某天的晚饭：家常羊肉抓饭，凉拌芹菜腐竹，炒油麦菜，家常小汤。
