人里面算长寿了。这是对我本人以及对近现代音乐和时尚影响巨大的人/乐队，始终是

两类区别于发酵和酿制过程的不同。Ale是千年古老的酿制方式，私人作坊就可运作，
其采用上面发酵(top-fermenting)，就是让酵母飘洒在灌里最上层，在暖热温度下，发
酵较快。Lager较现代大规模，酵母放在灌最底层，在凉爽温度下发酵(bottom-
fermenting)，用的时间也就相对长，几个月时间。

皮尔斯廉价啤酒。从工艺上说，廉价啤酒一定是采用下发酵工艺生产的拉格啤酒，也叫
皮尔斯啤酒。很不幸，我们身边绝大部分啤酒都属于这个类别，嘉士伯、喜力、燕京、
青岛或者朝日、麒麟啤酒，全部都是皮尔斯啤酒。而德国本土生产的小麦啤酒要用上层
发酵工艺酿造，今天中国大陆的超市里面也能偶遇这类所谓的好啤酒了。
上发酵法生产的啤酒因为发酵过程不易控制，生产成本较高，不能归于廉价啤酒一类。
皮尔斯啤酒的瓶标上经常有pils或者pilsen等皮尔斯的变体。
什么样的啤酒才算是好啤酒
下发酵工艺是啤酒工业的一次革命，发酵停止后酵母全部死亡，使得啤酒可以长时间
保存并适合长途运输，这才使啤酒进入了寻常百姓的家庭。在德国有上千种啤酒，皮尔
斯啤酒只是其中的一小部分。德国啤酒取得世界声誉的原因，源于该国的一套实施了
500年之久的苛刻的啤酒《纯净法》，该法只允许啤酒使用麦芽、酵母、啤酒花和水酿
造，不允许使用任何添加剂。非德国的廉价啤酒酿造时大量使用了大米，大家可以看超

涂白粉那是文艺复兴时期，不仅仅是在法国，欧洲都很流行，伊丽莎白一世画像里那些
个惨白的脸，就是这一时期的写照，由于他们用的白粉都含铅，不仅害自己，而且害人
——情人以及老公，你想，这么一口啵下去，一嘴铅的氧化物，久而久之，就翘翘了，
所以那个时代有很多著名的有钱寡妇。后来意大利有一位聪明的同修，从中参悟到了商
机，为了帮助某些女id加快寡妇进程，就在这粉里加了砷的化合物（砒霜之类的东西）

那么多不认识的单词，谁知道哪种好喝，哪种劲儿大呢？我一般都是别人要什么我就要
什么。
什么IPA, stout, amber, pale ale, pale lager, porter, 这些好像是大类？还分sco
ttish, belgian, english, german等不同口味的。。
总不能每次都要budlight、miller lite吧！会被人嘲笑死。。
大家能不能推荐几种比较好喝、度数较低、又比较有品位的啤酒？最好是符合我们中国
人胃口的。这样我以后每次都要那个就行了。

今年最喜欢的书是george saunders的小说集tenth of december (最喜欢的是书里最后
一篇的同名小说；也在new yorker上登过)；今年最喜欢的电影是american hustle,
gravity还有一代宗师；最喜欢的歌是网络大俗歌what does the fox say?!

Ok here's the problem. When I first look at the picture, my eyes immediately
gets confused. There's the trees to the left, to the right, the sign, and
the building itself. Now normally I'd go for the stuff in the foreground, in
this case the tress, especially the ones on the right. Problem is, they are
on the side, so that means they aren't the subjects. But man they are more
saturated than the building, you sure I'm not supposed to be focusing on the

名不见经传的the Chinos，他们却是我在08年听到的最让我惊喜的声音之一。“
Goodbye Victoria”，流畅优美的旋律，精致整齐的编曲，激情与老练俱备，作为一个
内地乐队的处女专辑，实在算得上相当出色。
与Torte Bus一样，the Chinos也签约于先生小姐唱片。Torte Bus被我盛赞为“中
国的Arco”，至于the Chinos，在浓厚的英式风格背后，不难看出4AD时代noise pop /
shoegaze的影响。主唱的声线，让我想起Pale Saints的Ian Masters，尤其在吉他噪
音衬托下的高音部分尤其相似。音乐里，隐隐流动着一点4AD风格的阴暗美学，漂亮，
流畅，琅琅上口的旋律，又让我赞叹制作的精良。事实上，这张专辑不停地让我想起
Pale Saints大名鼎鼎的“In Ribbons”：相当相似的感觉，吉他噪音的运用，适当的
弦乐点缀，流畅的进行；连遗憾都非常相似 -- 为了整体感的工整与顺畅，而被牺牲了
的想象力与冲击感。
事实上，这张专辑相当好听，但却缺乏更深刻的感染力 -- 我似 |

Interesting story. My husband and I took our honeymoon to China. We landed
in Shanghai and walked around looking at the skyline as the sun was setting.
