然后去了dealer B，他们居然可以查出来我昨天去了A家，然后我就说A家很不错，离我

打蛋器（Electric Hand Mixer）＋大碗（mixing bowl）＋量杯
Pie底座一个（锡纸上装好pie crust）
Cream cheese 一盒8oz
Sour cream 半盒～100g（最小的一盒大概200g）
鸡蛋3个
面粉 1/12 cup（多一点也ok，我们吃的那个加了将近1/6 cup）
淀粉 1/12 cup (同上)
糖 1/3 cup
醋少许
（以上所有东西在walmart或HEB都能找到）
做法：
1． 打开烤箱350F，预热；准备3个鸡蛋，将蛋白和蛋黄分离。
2． 8oz cream cheese, 放入大碗中加保鲜膜，微波炉中火融化1分钟，然后用打蛋
器（Hand Mixer）打均匀。将1/3 cup 糖分4－5次加入，每次用打蛋器打匀。
3． 加入半盒（~100g） sour cream, 打匀；
加入3个蛋黄，打匀；
加入面粉和淀粉（有人只加淀粉，还有人不加，量也依个人口味而定，我一般加等
量的面粉和淀粉， 每样大概1/12cup-1/6cup），打匀。

就可以买到刚出炉的饼。 我记忆中的鼓浪屿馅饼种类不多，就是有馅饼（绿豆馅），
椰子饼和绿豆糕。 据说现在种类繁多，有鼓浪屿馅饼、老公饼、老婆饼、香肉饼、
椰子饼、绿茶馅饼、海苔馅饼、素饼、绿豆糕、还有水蜜桃、荔枝、葡萄、桂圆、
草莓、菠萝、椰子等水果口味馅饼。 在我看来新的品种都不是鼓浪屿馅饼。
原来的3种饼里，我最喜欢的就是椰子饼。 距离我上一次吃到椰子饼已经有4年了。
最近一年来我迷上烤西点， 有点经验后就想自己做出有记忆中的味道的椰子
饼。这是我第二次尝试，比上一次更接近鼓浪屿椰子饼的味道，当然因为我没有原方，
而是自己瞎琢磨出来的，所以还是有差距的。 这个方子还有不少要改进的地方，
我还会继续试验的。最后一张照片是网上搜来的正中鼓浪屿椰子饼。

1／2 盒 Betty Crocker Pie crust (我偷懒，想要自己做皮也行，任何pie crust

留情哦。
先放一张火鸡成品图
花了一天一夜伺候这个20bl的玩意儿。先泡个澡，用1GL的vegatable broth，1GL的冰
水，1cup的海盐，3/4cup的brown sugar，和一些叫不上名字的香料（其实涉及独家秘
方，版权所有），腌制了一个晚上大概12个小时，效果不比牛奶浴差。泡好澡后，再享
受一下冰火两重天。先冲个凉水澡，擦擦干，做个massage，抹个神油（植物油），填
饱肚子（塞入苹果，洋葱，肉桂及一些密制香料），准备开始桑那。500度30分钟，350
度4个小时。
烤火鸡的时候顺便作了个cranberry sauce，pumpkin pie，mashed potato和corn。这
些按照包装上的说明一步不做就好了。

挞水是用前面“不输给肯德基”的那个帖子的方子，不过我没有whipped的cream，就直
接用的没有打发的cream，用量上变成了milk200ml＋cream50ml，下次打算把cream的量
加大点，看会不会更好吃，
挞皮就是Jiffy牌的pie crust mix，很方便，而且一盒不到$1^_^，正好12个
1. 塔皮：
“JIFFY” 牌 的“pie crust mix” 1盒
冰水 1/3杯
将1/3杯冰水慢慢加入“JIFFY” 的粉里，用筷子大概搅成团，再用手揉匀揉光滑，
包上保鲜膜放进冰箱里大约15分钟。
2．挞水的制作：
Cream＋牛奶：250ml
糖：40克
蛋黄：3个
低筋面粉（or all purpose flour）：15克
(1).牛奶、淡奶油、糖隔水加热，使糖融化。
(2).冷却后加入3个蛋黄，打均。
(3).再加入低粉，拌均。
接下来是挞皮入模，把挞水放入蛋挞底里面，8分满。最后放入烤箱350F，40分钟左右
。差不多蛋挞表面烤的有点黑就行了

三刀的做法，还是那句话，抹奶油真是个技术活！蛋糕是巧克力戚风，戚风的方子之前
写过，就是在基础戚风的方子上再加3勺可可粉，成品味道有点点苦，感觉下次做可以
减少到2勺。奶油打发的时候加了whip it就是啥whipping cream stabilizer，效果还
不错。巧克力碎我是用磨芝士的那种刨子磨的，但是还是很费劲的。夹心是樱桃的，已
经过了季节了，只好买那种用来做PIE的樱桃馅。如果有人要方子我就再具体写一下。

呵呵，我刚剩了半盒whipping cream，用下面这个方子做了点scone，是我最喜欢的一
个scone的方子，mm可以试试。

Ingredients
• 2 1/4 cups all purpose flour
• 1/3 cup sugar
• 1 tablespoon baking powder
• 11 tablespoons chilled unsalted butter, cut into small pieces

发帖数: 2661 | 47 看到版上mm用pie crust做红豆酥，想到其实可以做鲜肉月饼的。
试了一下挺不错，方子没有任何技术含量，想骗包子，还是写一下。
1.肉馅：肉糜，酱油，糖，香油，姜汁，糖可以多一点，比较苏式，朝一个方向搅拌，
起劲。
2.买来的pie crust，解冻，平摊，找个大小合适的杯子，盖出一个个圆皮来，像包包
子一样包肉馅包好。由于这个皮是苏皮延展性不是很好，建议捏成一个小碗以后在添馅
，这样比较好控制。包好以后反过来放。为了好看，我又刷了蛋黄。其实很想知道传统
鲜肉月饼上一抹红是怎么弄出来的，知道的mm指导一下。
我后来为了把边角料的皮也用掉，打补丁的又包了个很丑的。不过肉超多阿。 |

发帖数: 174 | 48 我觉得看英文的方子和评论对于初学者来说更容易上手。Alton Brown，American Test
Kitchen，Food Illustrated之类都比较好，因为一般不但会告诉用什么，多少量，还会告诉你为
什么，感觉比较scientific,理论性特别强，很容易触类旁通。基本上你自己在原方子的基础上做些有
personal touch的variation都不会离谱，比较容易出彩。
以前看我房东在烤任何一样以前没有做过的东西之前，都先做大量的research,比较不同的配方，还是
有道理的，（不愧是Harvard PhD出生，呵呵）。当然，人家牛的是看看方子，稍微估计一下ratio，
就知道好坏，不像我，需要试验一下才知道好坏。
记得她有一次为了做出比较flaky的pie crust，参考着她选出来的方子，一天之内烤了3个batch，
感觉还是把这个当事业来干的。当然效果也非常好。她那个pumpkin pie, 还有她有一次请我吃她花8
个小时做出来的巧克力flour-less cake，过了这么些年，我还真没吃过更好的。
