欧洲中世纪的饮食
我们在谈论欧洲人和亚洲人的体质的时候往往会强调欧洲人祖上是吃肉，所以遗传的体
格相对强壮。或许这是一种想当然，至少欧洲历史漫长的中世纪并非如此；网上有关资
料是这样讲的。以下是文章摘编。
中世纪饮食泛指欧洲中世纪（从5世纪到16世纪）的饮食，涵盖严寒的北欧和酷热的地
中海。从古时起，面包已是欧洲的主食，面条、麦片亦常见于民间；常用调味料有浓酸
果汁、酒和醋，伴以白糖和蜜糖，令当时的菜式偏向酸甜。一如不少古文明，肉类同样
是富人之食，而以猪肉和鸡肉最常见，牛因为有农业价值而较少食用。下层民众吃粗糙
、廉价食品。烤、炖、焗，是中世纪时最常见的煮食方法。当时炖锅相当流行，因为它
既能省柴火，也可避免肉汁流失，所以不少中世纪菜式也是肉味浓汤和炖菜。
谷类是欧洲人最重要的主食，谷物多数会制成面包，一些估计指当时欧洲人一天会吃1
至1.5公斤的面包，但谷类有时也会煮成稀粥、乳粥（西班牙文及英文：Frumenty）和
面条，其中裸麦、大麦、荞麦、粟麦、燕麦最为盛行。当时意大利北部有种植大米，但
