三文鱼片去刺，撒上粗盐，在冰箱里放三四小时，这样水就逼出来了；
用水把鱼片洗净，主要是把表面没有溶解的盐洗掉，用纸吸干，常温
自然晾干到表面有沾手的感觉；
在smoker里面放木炭，上面放木屑，我发现Hickery不错，不过你也
可以用其它的，比如maple。发烟熏到鱼片表面出汗就可以吃了。
烟熏鱼片可以放好几天不会坏。 |

去除了裙边，更适合。这次backrib促销，就用backrib做了。
第二步 冲洗，去除背面的膜，沥水，后擦干
第三部 准备RUB，我常用这个，简单，效果也不错，盐:黑胡椒：paprika：白糖：红糖
=1:1:1:5:5
第四部 抹rub，抹完，肉肉非常性感，我喜欢腌过夜
第五步 起火，喜欢用 chimney starter,塞两团纸即可。
第六步 没有smoker，就用经典的weber one touch gold 22.5寸代替，左边一滩水，右
边一滩煤球。一滩水的
作用防止肉过干，铝盘还能接住滴下来的油脂。
第七步 架肉在水盘上方，1-2块肉直接放上去即可，离火6寸多。肉多的，不要直接叠
在一起，专业的用rib rack，廉价解决方案，弄成肉卷，缺点是做完了是弯的。低温长
时间熏烤，上下通风口留一条缝即可。密封不好的烤炉可以把通风口关掉。
第八步 控温，250-275F 为理想温度，如果有无线温度计，会更便捷监视温度，一边灌
水，一边监视温度

四川人到了冬天就喜欢做腊肉，特别是在郊区乡下，那种挂在柴火灶上秌出来的老腊肉
更是让人着迷。人在海外，只能买到出口的腊肉，不晓得有多少防腐剂。回国过年亲戚
说带点腊肉走吧，只能婉言拒绝因为要被海关没收。所以说到最后还是要自己动手。出
来将近20年，之前也都懒得弄，自从去年弄了香肠，一股复古的心意燃起，所以今年不
但做了香肠，还尝试做了一下腊肉。
这种腊肉其实很简单，总共需要20多天就可以吃上。
选肥瘦均匀的五花肉，条越宽越好，洗净以后晾干待用。
用干净的锅把花椒用小火炒干一下，然后稍微捣碎，冷却待用。
再把粗盐小火炒至变黄，然后冷却待用。（盐和花椒的比例大概2：1）
把盐和花椒混匀然后抹在肉的表面，放入保鲜袋，放在5-10度的环境里，可以是冰
箱冷藏，或者冬天时的车库。
每天翻动袋子，并且揉一揉，让肉的每个面都能吸入味道。
这样腌10天后取出，用绳子吊起来风干。风干的地方最好通风透气，这样吊7-10天
至肉缩水大概15-25%。

2011年12月6日的最近更新：我今年刚刚又自制了四川麻辣肠和天津大腊肠，现在还在
风干过程中。我感觉我原来列出的广味腊肠不太正宗，今年不做了。而且我已经将以前
列出来的三种口味中的四川麻辣肠用盐量减少了很多。现在是10磅肉对应70克盐。全年
的有些咸了，咸了不好吃。本来腊肠就不是太健康的东西，又是风干，又是烟熏的，高
度致癌食品，肯定是十大垃圾食品前三名。所以要是再咸了那就更不健康了。所以今年
改成了少盐版本的四川麻辣肠。天津大腊肠还是去年的配方，说实话去年的天津大腊肠
最让我这个天津人满意了。真好吃，甜，香。

这回到好，是个smoker的，卖家好像是个代理，广告上一句没提
声音不错，可是一开机就一股烟味跑出来
我把它打开擦了擦，可是发现烟味都集中在电路板上，金属外壳和散热片反倒没什么味儿
我挺讨厌烟味，虽然不是不能忍受啦，总觉得能除掉就完美了
现在我把它壳子打开，插上电不放曲子，热一热跑味儿。
怎么办，又没有什么好办法能快一点除去烟味儿？ |

用版上朋友介绍的活性炭法试了试，炭成了熏炭，机还是熏机，不知道上面积了多少年
的老烟油子。
后来在google上看到人家用大型臭氧发生器除房子里的烟味，就跑去买了个小的（净水
净菜的那种，600mg/h）。
把功放往大垃圾袋里一套，充臭氧（工作20分钟，应该是200mg O3），密封一天。
为了保险，又重复了一次，好了！！
上来分享一下，呵呵，以后再碰到这种东西不用发愁了。
那个臭氧机超山寨，在国内买肯定奇便宜无比，呵呵，不过有用，赞一下 |
