了解。如果非要上升到“品”的层次,那多半是为别人而活了,太累。
前面有同学问到“醒酒”,我猜就是指decant吧。除了让wine充分和空气接触外,因为
红酒是连着葡萄皮一起酿的,里面会有些杂质,decant的另一个目的就是让杂质充分沉
淀。
前面说过,red wine的颜色和里面的tannin都来自葡萄皮。而tannin即使不接触空气也
会随着时间的流逝慢慢发生变化,因此有些red wine在放一些年后口感会达到最高峰(
当然,也并非放的越久越好)。这都看酒庄怎么调了。上次看到一瓶要1000刀的红酒,
说是在2030-2040年间味道才最好。。。

酒的酸度很高,不大好喝。
橡木桶成本高,美国产的400-600刀,法国的要接近1000,一个橡木桶3年后就没大用处
了,所以节省成本可以用橡木替代品- 橡木碎片,板块,骰子快...也是和桶一样
toasted.这些都是合法的。酒里能加什么tannin aid也是有规定的,不是随意的。
说到pesticides,能用什么不能用什么都是有规定的。进出口的酒都要做pesticide监测
,种类和阈值美国TTB和EU都有各自规定。
说到美国量产,加州高产的可以到18-20 ton/acre,法国佬是没法想象的。 有阳光,有

年代,加工工艺。其实好的红酒应该是苦的,有些年头短的酒在制作时还会特意去掉奎宁
(tannin)以增加苦度。
最基本的红酒种类包括:Merlot,Carbenet Sauvignon,Pinot Voir,Shiraz,Red
zinfandel等。(法国红酒一般会以产地命名,比如Boudeoux,可能拼得不对)基本上后三
种会甜一些,而Carbenet Sauvignon最苦,是吃牛排喝的。两个牌子你可以试试 -
Turning Leaf Zinfandel 和Gallo of Sonoma Pinot Noir。
