新鲜萝卜，可以用来炖肉，炖羊肉，牛肉，veal，buffalo，etc

发帖数: 33714 | 35 Veal Scallopini。之前做的红酒烩羊肩，grill牛眼扒，全部都是浮云。这是我吃过最
好吃的肉扒，没有之一，以致于今晚后来只尝了红酒牛里的蔬菜。
小牛cutlet两块总共1磅多，买来是厚厚圆形的一块，中间有带骨髓的筒骨。一般做法
都是先用小刀去骨，然后锤成1/4 inch以下的厚度。我没有肉锤，用擀面杖打了，但是
一煎又鼓起来了，这是我也没有办法的事情。。。//摊手
1. cutlet去骨，小刀刀尖伸到骨头周围割一圈，就下来了。然后把肉扒放进大密封袋
，不要封口，锤到1/4 inch以下厚薄。
2. 检查一下袋子有没有破，加2大勺中粉，盐适量，黑胡椒适量，密封，摇阿摇阿摇。
3. 煎锅化开2大勺黄油，外加1大勺橄榄油（我减半了），肉扒抖去多余面粉，中高火
每面1分钟，盛出来，放在保温的地方（微波炉里面）。
4. 原锅，炒软蘑菇厚片（2-3分钟）。加1/3杯盒装鸡汤，肉扒回锅，加2小勺碎
parsley（我加了很多）和1大勺黄油（跳过），继续加热2分钟左右。我汤汁收得有些
干，于是又随手加了些鸡汤。

全靠yelp。不过也吃到了一些好吃好玩的，尝试了一些过去没吃过的，也算是个乐子，

专卖德国香肠的流动小吃车，摆摊的是一个德国口音严重的大叔，每天11点半到3点半
在路口卖烤香肠，生意不错。
招牌就是各类香肠，每种香肠以德国汽车牌子为名，不过俺也不知道哪个好吃唷，就点
了套餐。该小吃摊的套餐是以各国政要命名的，在牌子正面看到了肯尼迪套餐和斯大林
套餐，因为JFK套餐附赠巴伐利亚炸肉丸子，于是就选了它。点了三种香肠，记得选了
一个Mercedes和一个BMW，其中一种是veal肉馅的，鲜嫩多汁很好吃，肉丸子也很嫩很
可口。配餐有一个热腾腾小餐包，黄油煎的小土豆，红酒腌白菜和德国酸菜，赞美一下
黄油小土豆儿，太好次了！
买完付钱的时候发现，噢，原来还有毛主席套餐呐，后悔自己轻易就被资本主义肉弹俘
虏啊！ |

豆类可以提供很多蛋白，如果体力觉得没有受影响，可以一直不吃肉类。我个人觉得体
力有影响，如果不吃肉的话。
蔬菜，据说被采下来3个小时后，大部分营养已经消失了。美国市场上的蔬菜，不光是
没成熟就采下来了，更是喷了各种东西以延长储存时间，譬如土豆被注射了化学针剂，
可以冷藏一年；还不说农民用了多少杀虫剂，化肥，催长素，基因改良剂。。。它们都
是留在人体内，不能被人体排出的。这样的蔬菜能提供的营养能有多少？那么差口感就
很说明问题了。
美国的肉类更是饱含抗生素，催长素，和以上农民种出来的植物加工成的饲料，或者发
酵的鸡粪（所有渔场产的三文鱼，都喂的鸡粪）。本人见过鸡农的鸡，毛几乎全秃，站
都站不起来，因为笼子太低太小，全是病态，这样的鸡肉和鸡蛋，打死也不敢再吃了。
又譬如市场上的veal，不是真的小于3个月的小牛肉，而是成年牛但从不喂食only喂牛
奶而长成的肉，难怪既不嫩也无味，更有怪味。
美国的菜没菜味，肉没肉味，全是因为这个产业链的目的是利益最大化。农民自己，也

小时以上，我们喜欢用火直接加热，他们是用烤箱间接加热起到炖的作用 |
