盐和胡椒稍微撒一点在表面腌一会可以把表面收干,防止汁水渗出。
用湿料腌的话,在上锅煎或者下烤箱之前一定要把表面吸干,不然也会漏汁。

if you use prime grade steak, just peppers and salt, maybe a bit sugar. Let
peppers and salt sink in for 4 hours at least.

this isn't true.
some people actualy recommend the more salt the better. of course you don't
want it to be salty. but salt is very necessary to make steak taste good.
Unless your steak is poor grade, salt wouldn't make it dry.

Don't forget to use fork to make little holes before you spread salt and
peppers, holes will make it easy for salt and pepper to sink in.

I don't know if you have grilled a steak before, but this is how it's done.
Salting is the most important process to prepare a steak, punching holes
will make it happen sooner.
A prime steak made in my way tastes just like how a steak from famous steak
house tastes.

I've grilled many steaks, and I'm a strong believer that salting a steak
early will draw moisture out of the steak, making it dry. Poking holes
in a steak prior to cooking will only speed up this process - unless it
is a lesser cut of meat, in which case poking many small holes in the
meat can break up the connective tissues, and thus tenderizing it.

then I have to say either you don't know how to grill a steak or you use low
grade steak.
Just google "grill steak", no matter how the recipes change by personal
reference, salt and pepper are always there, never left out.
I just can't imagine how a steak will taste without salt.
Go to ruth chris steak house and taste how a real good steak should taste
like.
Most of juice in steak come from their fat texture, which will not be
affected by salt. That's why a prime steak has many fat linings insid

只是美国人烤牛排喜欢age而已,我觉得这属于糟蹋好牛肉
而且age也不是说拿盐和胡椒腌着就行

I didn't say not to salt or pepper the steak, I said not to salt it prior
to cooking, especially not to salt it four hours prior. Salt and pepper
is added either during or after cooking. I've cooked ribeyes, tenderloins,
NY strips, and T-bones/porterhouses, none needed salting prior to grilling.

I was so interested in grilled steak that I have researched a lot, both
online recipe and tv.
I watched food chanel to see how americans cook steaks.
There was one hell competition of grilled steaks. all the participants have
marinated the steaks for at least 3-4 hours, they use usda choice ribeye.
Besides salt and peppers, some add beers, some add other secrete ingredients
. but all of them agreed one thing, you need to have steak marinated for at
least hours to have a great taste.

I still insist that the grade of your steak isn't good enough. You won't get
a dry problem with PRIME steak for sure.

我吃过的好牛排店未免太多了
你说的ruth chris就去过好多次,好吃是好吃,但还是糟蹋好牛肉。
我喜欢阿根廷的餐馆烤牛排的方式。

在上面刷一层植物油。烤完后可以用纸把油吸干,如果不喜欢的话。

一般就可以了.
然后用烤出来的汁做一个sauce, 原味的吃腻了就沾汁吃.
我一般是多家点胡椒, 然后butter, 蘑菇, 少量糖, 不够
厚的话加点bbq sauce

use rosemary or thyme, taste great on steak

Good cut beef(rib eye is more fat than others ), and it must be fresh.
Good wok
High quality salt and pepper, chili flake(if you like spicy food)
a piece of Butter melt in the wok (or you can use olive oil)
put meat in w/o seasoning
med/low heat, control the temperature with a thermometer.
depend on what you like, the temperature is different also.
flip over meat only once, put seasonings on the cooked side first, the other
side you can add later.

牛排好吃一定是age过了的。
普通店里卖的没有fresh的。

有的人买回来再dry age一次。

只有盐和胡椒已经很好吃了,但牛肉一定要够好,美国超市里10刀/磅左右的牛肉才会好吃。我试过14.99/磅的牛肉和6/磅的牛肉,真得不一样。
