选肉：很关键，一定要选dry aged beef (rib eye, top sirloin, tenderloin, etc),
USDA choice 以上的grade. （如果不是dry aged beef做法有很大不同）
making：
1。 抹上salt ＋ pepper ＋ extra virgin olive oil
2。 cast iron放oven 500度热3分钟，拿出来后放炉子上接着大火热。
3。 把准备好的肉放进去，每面sear 2分钟，出来就是medium rare。 3分钟出来是
medium。 我偏爱medium rare 一些，非常juicy。
配上自制的沙拉和西班牙水果酒就是美味浪漫晚餐一顿。这是吃的部分，练的部分还没
开始，嗯。

今天跑了个 tempo，5迈 40：10，一查age grade：60.85！ 高兴啊，总算及格了，呵
呵。
顺便报下今天跑爽了，前两迈jog，然后发现一个学校的跑道开放，进去跑，第一次跑
塑胶跑道，比跑路舒服太多了，就一高兴跑了个tempo，呵呵，觉得自己比一年前快了
很多，说明LHR有效，哈，而且forefoot landing感觉确实跑的更快。
跑完 tempo继续jog，一共跑了17.5迈，两小时53分钟，感觉不错，speedwork和long
run同时完成。 |

她的学生andy在salk做的不错，多产，也开始在老鼠上做东西，个人觉得是唯一一个以
后可能会在应用方面找到一些突破性发现的实验室了。
其它的人研究，还在走老套路，纠着几个长期做的表型往死了做，觉得离想象中的
aging越行越远了。
如何将yeast，worm和fly里的发现和老鼠中的研究联系起来，是个挑战。做老鼠aging
的和做其它模式生物的，基本上不搭太多的边。 |

somatic maintenance; though i challenge his theory, i like his essay and it
is fun to read.)

be less aggressive on this.)

身而言不算breakthrough，甚至可以说没有任何理论贡献，但这条路我觉得是让aging
走出困境的正确方向，因为nature insight里的那些所谓理论几十年前就有了，
cynthia算是唯一一个有新东西的，虽然理论上也没有突破，但却是实实在在的实验数
据支持一个理论（只是这个理论天生就有缺陷），其它的都是用很牵强的间接数据支撑
着理论。
所以看这个领域很多人的工作，我看不懂不知道他们在干什么。

年龄区间内，比如说40到60岁，如果没有得age-related diseases例如AD心脏病高血压
之类的，那么在这个区间往后的时间内得这种病的几率就会显著降低。类似一个年龄
bridge，过了的话发病率和死亡率就低了。
应该是篇调查centenarian的paper，有数据支持发病几率变化，年龄区间也有明确定义。
找了半天没找着，有没有同学看过这方面文章的，或者提供几个做这方面的名字可以搜
索的。
