所以Lard在美国一般只做工业原理,很少用于食品工业。
猪,一般都是阉割的,即使阉割也有这么大的气味,没阉割的人熬成的油有多大味道可

水油面团:2cup all purpose flour,4 tbsp lard, 4 tbsp sugar,
水没有量,估计100ml上下,就是揉成面团,建议边揉边加
油酥面团:1 cup all purpose flour, 5 tbsp lard
豆沙馅另调,前些天做面包用剩的
过程ms挺简单,分别揉两个面团,先揉水油面团,揉到耳垂软程度(我揉得偏硬了),
饧30分钟;油酥面团成团即可,这玩意儿不像一般的面团,没啥弹性,松松的容易碎,
很像做饼干的面团
把两个面团各分成16小份(如果做小一点20个也差不多),用水油面裹油酥,收口擀片,
开始叠被子(具体操作上网google吧,酥皮点心制作,万变不离其中)
一共叠两次,每次叠完都饧个5分钟,然后再擀成手心大,包馅,收口朝下放在烤盘上,
刷蛋液,点芝麻。375F烤30分钟,出炉。
成品太酥了……想用刀切半,但酥皮就会碎,不过口感超好。因为豆沙馅不够,所以包了
三个肉馅的,皮又软又酥,超香。。得意了很久,自此lg对偶的厨艺就真的仰视了,哈哈 |
