steak吃well done。。。还不如自己做卤牛肉。
一般专业大厨的建议,牛排都以三至八分熟为宜;但肉质不同,各有适合的熟度.美国肉类
出口协会处长吴秋衡的建议是:精瘦的菲力,三至七分熟;油腴的沙朗（sirloin),肋眼（
ribeye)与纽约客,四至六分熟;带骨的丁骨及红屋,五至八分熟;牛小排,全熟.
点用的术语,Raw 几乎生的(但绝不会是全生的,而是外熟内温), Rare 三分熟,
Medium-rare 三至四分熟,Medium 五分熟,Medium-well 七至八分熟,Well-done 全熟.
除非是熟稔的店家,不然建议先选择较生的熟度,等送上桌来,不满意再请师傅加熟.不过
遇上真敢点 Raw 或 Rare 的食客,厨师也会有点怕怕,因把肉弄熟很简单,但要煎烤到恰
恰好的半生熟,还真是经验技术的挑战哩. |

看看你们去过几个？
排名第三的彼得堡的state hermitage museum，拍过电影russian ark，就记得金碧辉
煌，没看到什么画……
排第15的Yale Center for British Art我也常觉得比英国的画廊都好……小而精致，
各个时期和画家的代表作收集得很精，介绍也很精，看完印象很深。建筑也很宽敞明亮
，令人愉快，不过太亮是不是对画不好。
有个Doha的Museum of Islamic Art。希望有机会去。
台北故宫上榜，北京故宫没上，倒是北京的789工厂榜上有名。说最近有一个Duchamp
and/or/in China的展览，到六月中截止。听着挺有趣，不知道goldy去看过没。
第50名是波士顿的museum of bad art，听着很好玩，有人去过吗？

五月底六月初就在學校放暑假前，為了讓我的這次行程引起學校同學更多的關注，爸爸
幫我做了一個展示牌放在學校校園里。爸爸在網上偶爾看到了一位黃先生所拍的這個村
子的照片，爸爸希望我們完成這次行程之後我可以動員我的朋友和校友一起通過各種募
捐來幫助這里的人。爸爸在展示牌上貼了一些孩子們的照片，他們的眼睛都盯著你看，
臉上泥跡斑斑，曬得又黑又髒。一眼就看的出來他們一無所有，而在我們圣馬力諾，我
們有iPads，Janoskis（名牌球鞋）和Priuses （流行日本油電兩用環保車）。山村里
的人們的家里甚至都沒有什么家具。羅老師家最好的東西就是靠墻邊的三張小床。學校
的泥墻已經開裂并受到侵蝕。

做牛排其实就2点比较重要，第一肉要好，第二火候要好，其他的都可以变通。肉一定
要选
专门用来烤牛排的，比如filet mignon, rib eye, new york/kansas strip, t-bone等
，不
光是嫩，更重要的是 这样的肉一般都是age过的。火候比较复杂，跟牛排的厚度，火力
大小
，自己喜好都有关系。一般thin cut，火力猛点，两边迅速搞定中间也就差不多里，要
是厚
些的牛排，就不能太猛的火，否则两边糊了中间还太生，但也不能火小了，否则肉汁跑
了，
牛排就不juicy了。
至于判断什么时候烤好了，最精确的方法就是用专门的温度计测试肉中心的温度，但是
比较麻烦，俺用了几次这种方法，就放弃里。还有一个方法，需要练习才能掌握。就是
用拇指轻轻碰食指，不要用力压，就轻轻接触，然后用另外一个手去按大拇指根部的那
坨肉，这个时候的感觉就是rare的，你烤肉的时候按牛排，感觉同样软硬，就是rare了
。同理大拇指和中指的感觉就是medium-rare，大拇指和无名指的是medium，这个俺用
的最多，大拇指和小拇指的是well-do |

首先要选好的牛排。不能是随便找块牛肉割成片片就可以煎的。到超市找已经切好的牛
排，这个很容易。
做牛排之前要先腌一下。两面撒一点胡椒面，一点盐，一点油，抹匀。室温下放一会儿
。牛排室温下开始煎比较好。
然后开始煎。用不粘锅可以，用钢精锅也可以，我一直用钢精锅，安全，好清洗，可以
拿铁刷子洗。
很多人说钢精锅容易粘，那是因为温度不够。锅要预热一段时间，滴上一滴水，假如水
珠沾上去吱吱蒸发了，就继续烧。假如水珠像在荷叶上一样滚来滚去，不见水汽蒸发，
温度就可以了。再热就没有必要了。
放一点点油，我用canola oil。然后把牛排丢进去。不要着急翻。拿着夹子或锅铲推一
下，如果还沾在上面，说明需要等。差不多好的时候就可以推动牛排了，锅底不会沾掉
肉的。这个时候翻面。同样等到能推动为止。
注意，如果钢精锅预热不足，那有可能就真的沾住了。另外锅热会把牛排里的汁水封进
去，这样比较嫩。
之后，把牛排夹起来（用筷子或夹子），把边都煎一下。两面好了之后煎边很快的。

0开了个金包.那个埃辛估计卖个几万块是没啥问题的.不过肯定不卖了,这种
确实很受不了就是rare球员也有好多烂的甚至不知名的.看了一眼连布朗,拉菲尔这种都
能是rare的....
当然更有哥们运气不好,开一个金包,rare那张是训练卡啥的...
不过开包确实除了合同卡和球员卡,其它的卡基本都没啥大用唉.fitness 我觉得铜的最
好,+20, 而银和金的,加四十六十的,一般不会把体能用到那么低还不轮休的. 当然有 r
are 的体能 卡也不错,比如 我有一张全队体能加20的
不过还是没太理解这种训练卡的用处,只管一场,感觉作用很有限...
