就是把面发了,把馅和了,把东西包了。发面活馅都一样,包的时候再决定做什么就行。
我说的这办法失手的可能性极低,没有技术难度大的环节,没有精确度要求高的操作,
总体操作也很简单。面向初学者,因为对众大厨来说这就是小儿科了。
先和面,这里是约1公斤面和接近1公斤水。面种类不拘,混入烤面包用的发酵粉,用量
看说明,大约为面的1/100。
水逐渐倒入面中,用筷子拌,无任何特殊要求。这是中间状态
关键是逐渐加水,到干面基本没有时开始揉,此后有必要还可以加。水量以不太费劲把
面大概其揉到一起为准。之后用手沾水继续揉。每次到手上的面不再被面团粘走时蘸水
。到某一时刻面团会迅速把手上和盆上的面粘走,此时揉到面团表面比较干蘸水,再蘸
2,3次水揉就可以。揉的全过程约5分钟。
揉好了这样。
然后盖上醒,用保鲜膜也可以,但是是拉在盆口,不是包住面。 |

an Administration proposal, just an idea that’s been floating around but
