第一，做一个面包需要耗时10天；
第二，它的starter（类似于酵种）来自于一群叫做Amish people的人，有且只有Amish
people会做这个starter。而更神奇的，这个Amish people是一个极其富有传奇色彩的
族群——他们生活在美国和加拿大交界处，因为信奉复古、极端的基督教，崇尚自然的
赐予，他们拒绝用电、汽车以及一系列现代化科技，过着与世隔绝的生活。Amish人禁

很适合喜庆场合~
方子（可以做24-30个中等的cupcake）
2条黄油室温软化，加糖2又1/4杯白糖（约440克，我只放了350克）打至蓬松
逐个打入4个鸡蛋，加1杯酸奶油，半杯buttermilk，4tsp香精，1盎司红色素打匀
（我放了约8克，已经看得出红色了，我想10-15克应该很够了，30克太吓人了。。。）
中筋粉2又1/4杯（约270克），可可粉半杯（40克），1tsp小苏打，1/2 tsp盐
拌匀过筛后倒入湿料中，轻轻翻拌均匀，看不见粉粒就好了，不要过度搅拌
纸杯装三分之二满（每个约50-55克面糊就好），预热350F的烤箱，18-22分钟即可
开始时候可以短一些，17，18分钟的时候就拿出来看看
牙签测试干净就可以了，多烤会发干
彻底放凉了之后涂icing（我个人非常喜欢这个cream cheese的icing，很香甜）
半条黄油软化后，加8盎司cream cheese（冰的），2大勺酸奶油，2小勺香精打匀
（可以先把cream cheese切成几块，会好打一些）

薯条生日的时候我做了这个给她带去，很受欢迎
蛋糕体我没有放那么多糖（她的方子大概是440克糖，我只放了350克，够甜了）
icing的糖我也没有放那么多，但是icing不甜真的是不好吃，尤其是美国娃来说
另外，强烈建议用muffin pan，投资一个吧，便宜的也就几块钱
以后自己用来做muffin，挺实用的
我经常周末做不同口味的小蛋糕，冻起来，尴尬的时候给孩子当早饭吃，很方便
我用过那种写着不需要muffin pan的纸杯，完全不好用
烤的时候面糊还是会把纸杯撑开，很丑。。。

好。奶油霜用的chocolate cream cheese whipped cream。本来都想撒珍珠糖的，考虑

你说的这个似乎比较接近正宗的温泉蛋。
刚搜了下温泉蛋，发现的确不是开水煮的，而是热水泡出来的，蛋白没完全凝固，蛋黄
看起来像uncooked，实际上已经是firm。
实际操作起来的话，主要是温度控制比较麻烦（70°C or 158F，30-40 min），再就是
蛋的质量要高。

sprinkle的出水口，所以有几个灯现在插得离出水口只有20厘米左右，不知道每次浇水
的时候，那几个灯被直接喷一个小时，会不会很快就要挂掉了>_< |
