In U.K. and in U.S., sirloin steak means two different things. The UK
version is a highend very tender steak.
In US the word sirloin steak is referring to a mid-range steak. Some shops
also sell other lower grade sirloin meet as steak.
Depending on which part of sirloin was used to cut the steak, you may find
the meat from tender to very rough. If the shop is using the tender part of
sirloin for steak you usually find the name printed as "top sirloin steak"
and more expensive.

Pan sear the steak on both side, about 30 - 60 seconds on each side. Preheat
oven to 375 ish. Put steak in oven 5 minutes each side for medium rare. 10
minutes each side for medium. Cut the steak to see how well it is cooked and
adjust your time properly.
Remove from Oven and wrap it in aluminum foil and let it sit for 5 minutes
before serve.
Hint, the key point is never rinse your steak nor cover your steak during
cooking. AND some steaks were pre-soaked in sodium solution so pay attention

When you buy a $30 steak combo, and pay $7 for a small bottle of seasoning,
a great pan with proper size is the best investment I can recommend. It can
be used year by year, and make your steak cooked right to the degree your
children want.
It is necessary to use a proper size of pan to fry steak. If you bought
steak from Costco, harris teeter, you will notice that the cut is typically
matching a special size of pan.

the key is to let the steak rest.
this is how i usually cook my steak when i live in an apartment.
cast iron pan in your oven and let it heat up to 500 degree F. throw your
steak on the pan, cook for 5 minutes. flip steak cook another 5 minutes.
take steak out and let it rest for about 10 minutes before eating. The point
is to let the heat redistribute. Once you let your steak rest long enough
the juice will not escape when you cut it open.

a simple poke with your finger and you can judge the approximate doneness.

全生(Raw)
一分熟(Rare):只把表面煎熟,切开有血色。
三分熟(Medium-Rare):外边灰褐色,切开有血色。
五分熟(Medium):外边灰褐色,切开粉紅色,最中间有血紅色
七分熟(Medium-Well):表明和大部分灰褐色,最中间粉紅色
全熟(Well-Done):表面稍微烤焦,里边全是灰褐色。
好的餐馆是按这个标准来的。靠控制温度。
Strip Steak,Rump steak,Round steak,比较硬,有嚼劲,老美好这些。
Rib eye steak和Sirloin steak,软的多,好吃些。
如果想一份牛排吃出更多的感觉,就要T-bone steak,一半tenderloin软,一半
Striploin硬。

有些老中不一定能够接受牛排。对于保守型胃,做牛排以下方子屡试不爽:
1。购买一英寸厚度usda choice strip steak ($8) rib eye steak ($8-$10) 或者
chuck eye steak ($3-$5). 一个大人8oz足够。
2。steak两面加一些salt and pepper,室温下等五分钟,然后加少量植物油浸润
3。cast iron skillet大火烧三分钟。同时烤箱400度预热。
4。steak放置到cast iron skillet上,一面60秒,无论多大的烟,只翻一次
5。steak放到烤箱,一面4分钟半,共9分钟
6。拿出来放十分钟。这一点很关键。
结果是非常嫩的牛排,介于medium和medium well之间,牛肉香味四溢,但是没有血流
出来。

This is the most marbled steak I have even come across...It is close grade
10+ kobe steak...it might well be the best steak I have eaten..
It is aging beautifully in my fridge...I should be ready to eat this weekend
...The only problem is the steak is too rich to be consumed just by myself..
If there are 2-3 people interested in super rich medium-rare steak, maybe I
can do a steak flight (with another USDA prime grade rib eye) for the first
home cooking event.
We can pair it with a 1995 Bordeaux

2016年开始想好好种点东西,也正好撞到这儿来,结果一下来了兴趣,于是种并且随时
拍照记录。
整理照片,看到2014年有三张,所以也顺便放进来,我都不记得2014年种过番茄,看了
照片完全忘了种的是什么,好像也是beef steak。种了多少棵,收成多少都不记得了。
不过看着番茄长得不错。我就这么一小块地,也是除掉草皮搭起来的,今年这里种了小
南瓜后,没地方种了,在home depot看到番茄苗 on sale,都六月了,还是忍不住买了
回来,2棵beef steak 大些,2棵 park's whopper 小些,我在角落里拦了一小块,阳
光不是从早照到晚的,大概要少2,3个小时,这个地方种了beef steak,在前面的菊花
旁挤了两棵whopper,那里阳光好,结果歪腻腻的whopper后来长得鋪天盖地的,beef
steak和whopper的产量相差很大。视频里有40多张照片。
这是什么虫子,beef steak的番茄与地面近的很多都被咬了小洞,我狠命甩,结果就从
洞里甩出这样的虫子了,土里有很多这样的虫子。

eat lean beef or extra lean beef
such as "ye round roast and steak with 4 grams of fat per serving and 1.4
grams of saturated fat. The next leanest cuts include sirloin tip side steak
, top round roast and steak, bottom round roast and steak, and top sirloin

I don't know if you have grilled a steak before, but this is how it's done.
Salting is the most important process to prepare a steak, punching holes
will make it happen sooner.
A prime steak made in my way tastes just like how a steak from famous steak
house tastes.

I've grilled many steaks, and I'm a strong believer that salting a steak
early will draw moisture out of the steak, making it dry. Poking holes
in a steak prior to cooking will only speed up this process - unless it
is a lesser cut of meat, in which case poking many small holes in the
meat can break up the connective tissues, and thus tenderizing it.

I was so interested in grilled steak that I have researched a lot, both
online recipe and tv.
I watched food chanel to see how americans cook steaks.
There was one hell competition of grilled steaks. all the participants have
marinated the steaks for at least 3-4 hours, they use usda choice ribeye.
Besides salt and peppers, some add beers, some add other secrete ingredients
. but all of them agreed one thing, you need to have steak marinated for at
least hours to have a great taste.

刚看到芝加哥版面在打造芝加哥吃的高楼呢,我就拷贝过来,打造一下北卡第一吃楼吧
,不论中餐还是其他国家的餐馆都可以评价一下
1. 必须是介绍自己亲身体会的经验
2. 包含餐馆详细信息(名字 地址 菜种类 停车信息等等)
3. 至少包括2-3个推荐菜(或者不推荐的..)
4. 至少说明餐馆的一两个与其它地方不同的特点
5. 至少100字以上
6.价钱(最高$$$$$,最低的$)

剔出麦当劳,肯德基这些快餐店,以下才是正宗的美国平民化,连锁化的餐馆(排名不
分先后):
1,TGI Fridays 比较喜欢它的韩式肉饼,Burger比较大,油腻,可以参见它的Rewards
Program,相当于自动10% Off。
2,Boston Market 非常平民化的美国家常菜,经常有小Coupon,譬如周末买一赠一,
不用给小费,加上量实在,15刀不到一家三口吃饱,还很健康。推荐!
3,Ruby Tuesday 它的Salad Buffet很不错,Steak也还行,但菜单小,没有很特别的
4,AppleBees 老牌美国连锁店,我最喜欢它的牛排,很多老美喜欢它的Happy Hours
5,Chili's 老莫的连锁店,比较实在,$20 for 2可以吃撑,每周二小孩免费,最爱它
的Quesadillas
6,Olive Garden 意大利的连锁店,不讨厌那种浓郁的Cheese味的可以去,最爱它的
Zuppa Toscana(就是土豆汤里加了小肉末),加上免费的面包条,每次还没有上主菜
就吃饱了。。。

你丫真他妈丢中国人的脸。
事情经过是这样的:
贱男想吃牛排,就排队等着。切牛排的黑大叔(看上去大概60左右)按顺序给大家切,
轮到该贱男的时候,只听到贱男说:“Give me the steak”, 甚至没有一个 ”Please
”, 当时台面上还有一块,大叔就很自然地给他。因为本人就在旁边,真没觉得黑大叔
做得有何不妥。但不知贱男为何勃然大怒,极不耐烦地说:” I don’t want this
one, give me the fresh one.” 边说边指向旁边的烤火腿。大叔很耐心地说:”You
want steak, I give you steak.” 说实话,黑大叔看着真不象恶人。退一步说,就算
他是恶人,但也没对该贱男做什么恶事儿。贱男好像不能控制自己了,大声说: “ I
paid money! I want fresh steak! God damn it! Give me the fresh steak! You
stupid! ” 我实在听不下去了,就赶紧逃走了,所以不知后来怎样。好像看到贱男跟
领座的印度大叔又说了点儿啥。再后来,贱男居然又有脸去要牛排,可怜的黑

just 4 steps..
1) rub the steak with grape seed oil, salt and pepper. Oil goes first, and
then salt and pepper.
2) sear the steak in a cast iron pan, about 1 minute each side with butter.
3) preheat the oven to 375 degree, and put the casyiron pan with the steak
in right after searing.
4) boil for 10 mins (depends on how raw/cooked you would like the steak be)
and then turn off the oven and let the steak sit in the oven for another 5
mins.

没开玩笑,以前采访时候说的,谁忘了,还有点小名气。
别说steak,当年夸梅布朗状元后请记者吃steak,然后感叹说现在steak比以前贵多了
,被记者改天发文章说一看就是穷小孩没吃过steak,这几年steak根本没涨过价云云。

Zaytinya, mediterranean 料理。每一碟都是小小的。每一碟的价钱不是很贵,但因为
份量都比较少,所以要吃饱的话,也要花不少钱。喜欢吃他们的面包,swordfish
kebab,knisa lamb chops. 基本上每一样都很好吃。 这个餐厅是不接受订位,等位时
间比较长。
oya,日本菜。感觉比较高档点的日本菜。他们的寿司很好吃。
capital grille, up-scale steak house
Sam and Harry's, steak house, 他们家的海鲜也很好吃。
Smith & Wollensky, steak house, 这家餐馆跟sam and harry's 是一条街。他家的
restaurant week menu 很值。
iRicchi, 意大利菜馆。喜欢pasta的可以去。
Monrton's the steakhouse, up-scale steak house. 价钱比较贵啦。如果不是用公家
的钱,我也吃不起。他们以前是不参加restaurant week的。

他又不是费城人……
记得当年kerry来费城,也要表现亲民去买cheese steak,结果点错了……
因为一个proper cheese steak是要配provolone或者cheese whiz吃的,结果伊要了
swiss cheese……结果拍马屁拍到马腿上……
philly inquirer讽刺伊说,在费城,这(cheese steak配swiss cheese)是一种

一朋友的朋友有个出差的机会来了西雅图,周三晚到,周四就给我打了一天的电话要约
周末去购物,什么outlet,costco,baby r us等等。当天我没带手机,晚上回家才看
到未接来电,9通。
本只答应朋友招呼他一餐晚饭,但想到人千里迢迢来到这儿,人生地不熟的,还是答应
了,接着就是一顿奔波。outlet买了约三千刀,然后这儿500那儿500的,前后花了四五
千,脸不变色心不跳的,一半以上给的是cash,还多数都不keep receipt,也许不是帮
人买的。
此人本科毕业后工作了四五年,工薪阶层,没什么额外收入,一天花四五千刀毫不手软
,还一直喊便宜。国内的通胀是到了一个什么地步了吗?
虽然我六点多就饿了,为了能多去几间店,折腾了九点多店都关门了才吃晚饭。

除了在上期谈到的美国名牌steak house之外,近年另一难忘的吃牛扒经验,发生在意
大利佛罗伦斯。
佛罗伦斯牛扒(Bistecca alla?Fiorentina)在欧洲十分出名,它採用Chianina牛,在
托斯卡纳(Toscana)的山谷中自由自在的放牧,吃尽那里尽收大自然阳光和空气精华
的绿草,不像和牛那样,不让它运动,再以粟米和其他饲料把牛谷肥,也因此肉味特别
够。Chianina牛肉外观上的最大特徵,就是近乎白色,吃起上来,不像日本和牛般油脂
丰腴,但却更加肉味香浓,肉质柔软和富弹性。
佛罗伦斯牛扒的吃法,和我上期谈到吃「靓」牛扒的一样,强调原味。用明炉炭火烤,
只用盐和胡椒来调味,但却用橄榄油,而不是美式的牛油,最多加片柠檬添味。
当时我在佛罗伦斯的一间著名餐厅Trattoria Za Za,叫了慕名已久的佛罗伦斯牛扒,
我叫的是minimal serving size,你估是多少﹖结果侍应奉上的竟然是——1kg!不错

宅家的周末从香喷喷的鸡汤馄饨开始~~~~下次馄饨肉馅不能这么多了,,,导致吃完早餐到2点都还不
饿。。于是中午就剩菜拌饭,另加从国内搬运来滴秘制辣椒萝卜,哈哈,超给力!
晚上吃的是高蛋白~tuna steak+自制面包。面包是我的偶像豆豆猫的中种,打从第一次用就永久珍藏
滴方子~~~

tuna是某次偶然在超市发现有卖,还是特价!!用油煎了煎,撒些steak盐胡椒和柠檬汁就好了。包装
上说要弄熟了,于是就煎的比较熟。但吃起来还不错,汁还很多滴~话说某次在餐馆点了个tuna steak
burger,5分熟的,还一直以为是牛排,吃的时候还一直纳闷,怎么这个牛排这么像生鱼片的味道。。
。后来才发现是做成steak形状的tuna。。。土死了。。。。
那个面包,我把豆豆猫方子里的主面团换成了全麦面的。然后和中种一起揉的时候加了干果碎和椰丝。
超喜欢全麦出来后的那些个小点点的效果~嘿嘿~
下面是最近做的超浓的酸奶。吃的时候加了香蕉。

虽然词典里牛腩就只有牛胸腩(Brisket)这一块。但按中文理解,其实还包括了扇面(
五花肉)牛腩(Flank)等。还有以下几块:
坑腩(boneless short rib,即无骨牛仔骨):牛味最濃,取自牛胸前的牛仔骨/肋排
(short rib)或旁邊牛肋條(Finger meat)部位的的肉。
爽腩 (Skirt Steak):又叫「繃紗腩」、「崩沙腩」或「蝴蝶腩」,是牛肚皮的腩位,
位于牛的横膈膜附近,爽腩貴坑腩一半,由於有塊薄軟膠質,爽軟不硬。
腩底:連著坑腩近牛皮下的一塊肉,又粗又韌,很難炆。
腩角:爽腩和坑腩中間的一塊肉,分量極少。四面都有軟膠質,非常爽脆。
挽手腩:集坑腩和爽腩的優點於一身,味濃煙韌。
牛仔腩:veal breast

wait until you try my steak..
I have cook many prime steaks at home...My results have been better than
many of the steak house I have tried in the states...they often err on
overcooking the meat...Also the wine I like with the meat often cost 100
bucks plus in the restaurant..that hurts when I know I can get much better
ones from auction..
To cook a steak at home, you need to know your cut (temperature/fat content/
thickness ) and then try to be precise to seconds..

It is a myth that steak should be cooked at high temp to get a nice crust...
The key is right temperature/time/dry surface.
Buy a steak 1 1/2 inch or 2 inch thick...it is almost impossible to cook it
well if it is too thin.
I wet age my steak in a vac sealed bag for about 1 week and then dry it in
the fridge wrapped in paper tower to remove the water content.
Take your steak and let it sit in room temperature for at least 30min-1 hour

一朋友的朋友有个出差的机会来了西雅图,周三晚到,周四就给我打了一天的电话要约
周末去购物,什么outlet,costco,baby r us等等。当天我没带手机,晚上回家才看
到未接来电,9通。
本只答应朋友招呼他一餐晚饭,但想到人千里迢迢来到这儿,人生地不熟的,还是答应
了,接着就是一顿奔波。outlet买了约三千刀,然后这儿500那儿500的,前后花了四五
千,脸不变色心不跳的,一半以上给的是cash,还多数都不keep receipt,也许不是帮
人买的。
此人本科毕业后工作了四五年,工薪阶层,没什么额外收入,一天花四五千刀毫不手软
,还一直喊便宜。国内的通胀是到了一个什么地步了吗?
虽然我六点多就饿了,为了能多去几间店,折腾了九点多店都关门了才吃晚饭。

休斯顿,是个吃货LAND!!

在休斯顿实习的6周,最让人难忘的就是那的食物。反正我是瘦着去胖着回的。
这有全美最好吃的steak和BBQ,还有别具特色Chinatown。
不像纽约和加州的那种长街似的布局,它以plaza的形式为主, 方便停车。很干净很新
,比我之前看过最干净的Washington DC Chinatown还干净。
我住的地方就在5个plaza聚集的中心地带,一个叫做coporate housing的apartment
hotel, 配备很齐,连中文频道都有,如果短期居住或是旅行非常划算。
出门走路1分钟,遍地是餐馆。可以毫不夸张的说,这六周都没怎么吃过重样的餐厅。
当然如果没有车出行,建议在enterprice上面租个车,便宜且方便跑去更多的餐厅品尝
美食~(ps:休斯顿没啥玩的,就focus在嘴巴上)
离我最近的是黄金广场:
1. 老骨头汤:很惊讶能在美国开起来,汤味很鲜美,骨头肉也很嫩。它家的新疆大盘
鸡也很不错。据说晚上12点后2楼的bar会开放,可以点凉菜喝小酒潇洒潇洒。

黄旗我只生吃, 没熟吃过。 据朋友说, 黄旗烤或熏还赶不上黑旗。 我还真不知道。
不过我有一种做法, 自己觉得还可以, 是偷懒想出来的发子。 把黄旗或黑旗切成
steak, 把鸡蛋搅碎, 把tuna steak 两面粘上鸡蛋, 可以在tuna steak上抹点粉(
我一般不抹粉, 怕麻烦), 在热油上两面煎黄即可。 最好是用黄油煎。 出锅后在
tuna steak面上撒点胡椒, 盐, 就可以吃了。 外面熟, 里面还是生鱼片。
还可以参考伟大钩者的tuna炒饭。哈哈。
还有就是做tuna salad. 我把tuna切成细长条, 从韩国店买的腌萝卜切成丝, 葱丝,
姜丝, 青辣椒切成丝, 把所以东西拌在一起, 放麻油, 橄榄油, wasabi, 盐(不
放盐也可以), 挤一点柠檬汁, 拌好就可以吃了。

steak 做法: medium rare 网上找的方子, 稍微简化了下儿,真的超好吃, 不输饭馆的!
昨天刚刚收到我的staub cast iron grill pan, 迫不及待拿来用,哈!
Rub steaks with worcestershire sauce and montreal steak seasoning on both
sides.
Sit at room temperature for 30min.
Drizzle with the olive oil and put on the hot grill.
4-5min each side, after flip, put butter and thyme on.
