我用了whipped cream,double boiler的时候上面会浮沫,也不是要开那种,火非常小
,就是有一层沫子,不知道是不是whipped cream的原因?
另外做出来的texture是有点鸡蛋羹那样的。。。表面也不光滑,是不是没过筛的原因? |

重复. 以上提到的面包是很简单的一种。如果你有钻研精神,可以查一下preferment
process。各种方法结合可以做出很多奇妙的效果。越是简单的原料越能体现出食物内
在的味道。在不同的做法下,味道texture千变万化。
这就像音乐。同一首曲子不同的人理解不同可以表现的方式不同,体现各种风格。
很多面包店,为了大批量生产尽量低成本高价格的产品,从一营养到味道都比不上自己
做的。

国内的素鸭素鹅是什么我不懂,在这买的这些,seitan是补充蛋白质的,应该是类似国
内的素鸭,quorn牌子的常买,因为是个菌类,对身体也好。 tempeh里边 含脂肪,蛋
白质,维生素等等,cholesterol, sodium含量又低。这些,并不是因为texture类似肉
才买的。我不是完全不吃肉,想嚼肉我就直接买肉吃了,现在是越不吃越不想吃而已。

不过多数人转变过程比较困难,需要素鸡素鸭来中间过渡,仅此而已

另外sear的过程也失水,这么在意的话不妨试试原汁调味reduce直接浇回去。maillard
browning可以增加flavor和texture不错,但是也没有到次次不可或缺的地步 |

先连上ipod nano,心里对它能不能推动300欧的HD580实在没有信心.
第一首是肖邦的Scherzo No.2.也许是刚开声,或者是CD的录音质量一般,没有听出太多
特点来,就觉得钢琴的声音比较有立体感.推动倒没有什么问题,开到9/10的音量就足够
了.
然后就换上discman,Panasonic CT790.
CD是穆特的卡门幻想曲,音量开到最大25/25.这里HD580开始进入状态,加上这张CD的录
音质量非凡,档次一下子就显示了出来.从流浪者之歌,到卡门幻想曲,再到魔鬼的颤音,
我都从里面听到了从来没有听到的东西.HD580的空间感开阔,Texture丰富,声音真实,每
个频段都比较均衡.
然后换回到ipod nano,试听一下流行歌曲.
这次选的是张靓颖的"The One",320k mp3."身体语言","Take it like a man",这两首
我用Sony 888已经听得很熟了.HD580的声音给了我一个很大的惊喜,它的空间感非常开
阔,相比之下888的空间就很狭窄.HD580左右伴奏和人声的距离 |

Anedio gives me the feeling that I am 'hearing' the live music, before it
