用蛋白來是蛋糕蓬發起來
這種蛋糕是不需要加baking powder和baking soda的
主要的代表有戚風和天使（這兩種的蛋白打發程度不同）
cake mix的蛋糕是用baking powder和soda來蓬發的
所以完全不需要打發蛋白，更不用做高難度的全蛋打發
混勻了就好
用baking powder和完全靠雞蛋蓬發的蛋糕口感非常不一樣
因為氣泡大小和均勻程度都會有一定差別
總的來說baking powder蓬發的蛋糕的氣孔比較大
蛋糕組織遠不如完全靠雞蛋蓬發的蛋糕細膩 |

中间陷下去的
就不明白为什么呀。。
看别人做的cake都蓬蓬的很漂亮
俺这个怎么像没发出来似的
现在体积还是跟倒进去的面糊差不多。。。
郁闷
我400F烤20分钟到上色然后盖了锡纸
350又烤了40多分钟
时间应该是够的吧
用的是9寸烤盘，总不会因为烤盘大才塌吧？
还是说我放了250ml左右的牛奶太多了导致面糊太稀？。。。
唉，偶满怀期待的说，有点失望
哪位达人能帮忙解答一下呀？

发帖数: 85 | 34 这是我为安安三岁生日做的“蛋糕”。因为安安对鸡蛋过敏，所以这个“蛋糕”其实不
含蛋。我采用的是比较偷懒的方法，就是到grocery store买不含蛋的cake mix，然后
做的时候将做法说明中的水换成等量的牛奶，然后不加鸡蛋。
蛋糕烤好后冷却。然后用buttercream icing做基本装饰，再放上事先用royal icing做
好的树，塑料thomas小火车和气球，最后再插上蜡烛，就可以了。 |

只上过wilton 1，回来看看图片，觉得还是翻糖的好看，于是就临时开始学做翻糖装饰。
翻糖的皮是棉花糖翻糖。可能薄了一点，可惜好像不是特别平@@
花有的是棉花糖翻糖，有的是直接买的翻糖混gum paste做的，看不出什么区别，就是
棉花糖翻糖太粘，还很不容易干，就不容易定型。
不过这么短时间从学习开始，能做出来一个wedding cake，还是很满意啦~ |
