Dough:
1. 1 (.25 ounce) package active dry yeast
2. 1 tablespoon white sugar
3. 1 cups warm water (110 degrees F)
4. 2 tablespoons olive oil
5. 1 tablespoon salt
6. 3 cups all-purpose flour
所有的东西混和在一起，让在暖和的烤箱内发面，大概1个多小时就可以了。
我把面分成2块，作了一大一小的两个crusts。
1－BBQ Chicken Pizza
topping：
1 一小罐pineapple chunks，1 teaspoon minced gralic, 适量鸡胸脯肉切钉后， 一
起腌渍，放冰箱内等到用时取出。
2.dough上涂BBQ sauce，然后在把菠萝，鸡肉放上，然后洒上mazzralla cheese, 喜欢
的话，可以多洒一些。LG 不喜欢，MM 怕吃胖，所以我放了很少。最后洒一些香菜，就

Pie底座一个（锡纸上装好pie crust）
Cream cheese 一盒8oz
Sour cream 半盒～100g（最小的一盒大概200g）
鸡蛋3个
面粉 1/12 cup（多一点也ok，我们吃的那个加了将近1/6 cup）
淀粉 1/12 cup (同上)
糖 1/3 cup
醋少许
（以上所有东西在walmart或HEB都能找到）
做法：
1． 打开烤箱350F，预热；准备3个鸡蛋，将蛋白和蛋黄分离。
2． 8oz cream cheese, 放入大碗中加保鲜膜，微波炉中火融化1分钟，然后用打蛋
器（Hand Mixer）打均匀。将1/3 cup 糖分4－5次加入，每次用打蛋器打匀。
3． 加入半盒（~100g） sour cream, 打匀；
加入3个蛋黄，打匀；
加入面粉和淀粉（有人只加淀粉，还有人不加，量也依个人口味而定，我一般加等
量的面粉和淀粉， 每样大概1/12cup-1/6cup），打匀。
4． 打发蛋白：把蛋白放到干净，干爽的大碗里，加一小勺儿白 |

来美都快一年啦，一直好馋蛋塔，今天终于买来了模子，各种材料，
按文学城的LUCY 姐姐的方子烤的：
方子如下：
[原料]
1。塔皮：“JIFFY”牌的“pie crust mix”1盒, 冰水 1/3杯
2。蛋塔液：鸡蛋(大的) 儿 1个, 鸡蛋黄 4个, 牛奶(勿太凉，否则糖不易完全融化) 1
杯(约250毫升)糖 1/2杯, 1tsp香草香精(vanilla extract)
[做法]
1。将4个蛋黄和1个鸡蛋打匀，再加入牛奶和糖，充分打匀，让糖尽可能融化。加入香
草香精。然后用细筛过滤一下蛋液.
2。将1/3杯冰水慢慢加入“JIFFY”的粉里，用筷子大概搅成团，再用手揉匀揉光滑
3。准备两张waxed paper 。将揉好的面团均匀分成12等分，每一份揉圆按扁，放在两
张waxed paper之间杆成直径大约10cm的薄塔皮
4。将皮放进这种做muffin的模子里.

买一个crust:
1磅（１６ｏｚ）Philadelphia cream cheese,买regular的不要low fat。nnd好不容易吃一次cheesecake，有点fat就有点８。提前放室温几个小时软化。
1/2 cup sugar
2 eggs
1/2 cup orange juice
optional: 2 tsp villina extract (我有，昨天忘了放，也没事）
都弄一块儿，按以上顺序一样一样加入，搅匀。最好hand held mixer:
没有用筷子也行，搅拌均匀倒ｃｒｕｓｔ里，３５０度，大概２５－３０ｍｉｎ,就成这个了：怎么样，够简单8？ |

住垂涟三尺，可是漂亮的蛋糕我还真不会做，就简单学了个蛋挞，今天小试了一下，
还真的成功了！这是我第一个DIY的成品，版上的大厨们轻拍：）
Recipe：
挞水：
cream（瓶装）：200ml
牛奶：250ml
糖：40克
蛋黄：3个
低筋面粉（or all purpose flour）：15克
挞水的制作：
1.牛奶、淡奶油、糖隔水加热，使糖融化。
2.冷却后加入3个蛋黄，打均。
3.再加入低粉，拌均。
关于挞皮,我买的walmart做派的皮（pie crusts），效果是出乎意料的好，国内可以直接买超市现成的挞皮。
接下来就只要把挞水放入蛋挞底里面，7分满就可以了。你也可以加入爱吃的水果，如
香蕉，桃子或是菠萝等，最后放入烤箱350F，40分钟左右。差不多蛋挞表面烤的有点
黑就行了，简单吧，今天做了12个，一下子就消灭了，真的比KFC的好吃哦，而且物美价
廉哦～ |

...我从来都是估计的，所以每次尝试做点油酥点心均告失败！
后来干脆买来pie crust直接用，效果确是非常非常地棒，特别酥脆。现在经常用来做
红豆点心，豆沙也是从中国店直接买的现成的，烤出来的这个点心简直太好吃了！而且
又简单，不用自己和面做皮。

shells虽然方便 但是做出来很硬 不好吃
sheets虽然不方便 但是可以自己捏进模子里。。。然后可以弄薄薄的。。比较好吃。。。
然后挞水。。。。
我太懒了。。根本没度量 冷却这个工序。。。

1 用奶水 下楼有图
2 powered sugar 据说普通sugar不好弄开
3 鸡蛋 我一起弄进去了 昨天弄还过滤了下蛋清 今天连蛋清都不想过滤
4 面粉 自己看着差不多儿就可以了。。。
我没按照前面mm那样的冷却啥的。。我都按照先后顺序 一起和了。。。。=。=
然后把sheets 切开 一块块儿 捏开。。。。放进模子里。。。。。捏好形状。。。然后把挞水倒进去。。。。
然后放烤箱。。

活动,可以晒爬梯, 奔照片, 帖菜谱. 我先来抛块板砖, 希望能引出玉来
一直很喜欢吃蛋挞, 印像最深的是国内肯德基的蛋挞, 酥脆的挞皮配上浓香的馅, 偶尔
还会咬到一两颗微酸的葡萄干. 泡上一杯茶, 整个下午都有好心情.
来美国后, 有段时间住在美国的乡下地方, 去最近的中国超市开车也要四十分钟, 后来
抵不过诱惑, 就从网上找来菜谱自己动手DIY蛋挞了
挞皮: 买的是Betty Crocker Pie Crust Mix, 我觉得用起来很方便, 很顺手, 只要按
Instruction加水就可以了, 做好dough以后, 如果觉得太粘, 可以适当加些面粉.
挞馅: 用的是从Costco买来的Heavy Whipping Cream和鲜牛奶, 大概是三比一的比例,
根据个人口味加入适量的糖和生蛋黄, 搅拌好, 放在一边
制作过程: 把挞皮擀成 Muffin Pan的大小 (如果觉得太粘的话, 可以用手捏不一定要
擀), 然后放入Muffin Pan内, 将搅拌好的挞馅倒入内, 大概倒满四分 |
