分析原因，估计烤整鸡的都是有party的，这个点儿要么party还没完，要么party结束
累得够呛，没劲儿贴照片了。那俺就来贴第一个吧，因为俺们就三个人（算上肚子里的
一个），啥party也没有~
前年在别人家吃的，啥味儿都忘了，就记得肉挺多挺干的。
去年请了30多个人来家里吃饭，挑了个最大25磅的。第一次烤，连party带turkey忙活
了一天。后来乱哄哄的，自己都没正经吃上一口。临了给人打包了好多，冰箱里还剩了
好几饭盒，也懒得吃了，后来都糟践了。
今年因为待产在家，没条件弄party了，又觉得没火鸡的感恩节就跟没饺子的除夕一样
，想了想还是烤吧。挑了个最小8磅的，又是第二次烤（有经验了），超入味超好吃，
出炉不到两分钟，两条腿就进了我俩的肚子，然后挑卖相好的，给左邻右舍送了三盘，
回家后居然把剩下的一扫而光，连stuffing都没剩。。。
上菜谱吧，连着烤了两年总结出来的：
1. 提前至少1.5天解冻
2. 提前至少12小时腌：将葱段、姜片、蒜瓣、花椒、大料、草果、陈皮放入沸水；水

下面的菜谱没有肉，如果喜欢可以加点groud meat (加肉的话要先和其他切成丁的配菜
炒成金黄色再放进去bake）
材料（都是approx)：六个中等size的organic bell pepper (costco里面一包,做6个的
话够6个或者3个人吃了，看你还做不做其他菜）
两到3个tilapia fillet，最好是wild caught的
lemon pesto (买了方便，直接涂上去鱼上。不买的话，可以用柠檬，lenmograss,
basil之类marinate fish)， 一个 lemon

一样的吃法，吃不了几个就觉得够了，一大袋要吃很久，所以后来很少买了。前一阵在
某本美食杂志上看到这种填馅之后再烤的做法，马上联想到了青椒醸肉。青椒醸肉我做
不好，每次都觉得既不好看味道也一般，这个小彩椒醸肉倒是可以试试~等买回原料却
想不起来在哪本杂志上看到的做法了，于是便有了这个自创的版本。烤好的小彩椒味道
超过我的预期，咸咸甜甜的。而且因为加了乳酪，肉馅的口感很松软湿润。连平时极少
主动吃菜椒，大人劝了才会别别扭扭吃一丁点儿的薯条小朋友都一口气吃了3个。最近
一次做的时候，薯条看见我在给彩椒填馅就眉开眼笑地说：“我喜欢菜椒配肉一起吃~”

称量单位说明：1杯=236毫升，1大勺=15毫升，1小勺=5毫升

缺点是，现成stuffed通常塞得太慢，烤完后stuffing会鼓出来一些，稍微影响美观。
有经验的，自己做stuffing，可以任性一些哈。
根据烤前是否化冻，又分为thaw和non-thaw两种。
thaw的，要事先解冻3-4天不等，比较麻烦。
据说，解冻过程中，有可能滋生细菌。虽然几率很小，还是，不建议。
Non-thaw的省心儿多了，除去包装，直接放烤架上就O了。
缺点是，烤得时间长些，是thaw的一杯半时间。
可是，过节的节奏还是从容些比较舒服，所以，我选的这种。
烤火鸡是有窍门儿的，那么大个儿的鸟，烤小半天的时间，容易烤干，俗话说，柴了。
我以前吃现成的，都挺柴的，所以一直以为火鸡就是不好吃的。
直到。。。吃到自己烤的，wow，太美味了!

1.turkey 20lb，冷冻的那种。
先搁冰箱里化冻。
熬花椒水+盐水一大锅。
解冻后把turkey放花椒盐水里腌过夜，入味。
腌好后的火鸡是松松的。
把火鸡取出来，烧热水，用刚开的热水沿火鸡皮慢慢浇个遍，火鸡的皮遇热水就会收缩
，这样烤出来就会很好看。
然后再用小刷子刷蜂蜜+butter刷遍火鸡全身
（butter要微波炉先化开然后依据个人口味与honey按比例混匀）
然后把火鸡放盘子里包上锡纸放烤箱里
烤箱温度400度。
烤的时候差不多每个小时就看看，重新刷遍honey+butter
其实4个小时就好了，但我们都烤6个小时
大家都说味道比店里卖的好吃。
2.stuffing 我试过好几种，这个stuffing的是纯中式的
糯米和香米混合，先蒸熟
腊肉+黄花菜+黑木耳+红萝卜
把米和菜混好包纱布里然后塞火鸡肚子里
我还做过bread stuffing我个人不喜欢，太干了。这种rice stuffing比较适合中国胃
。大家都说特好吃。
3.热量我没算，今年再烤的话一定好好算，然后再补片。 |

面包用水浸湿就可以了，因为stuffing的主要作用是烤的时候不停的提供水分，防止肉
太干。还可以加点酒 姜 香料来去腥。这个stuffing可以塞各种鸟类的肚子。:)
烤火鸡还是需要个rack的，会滴很多油下来。我家有个带rack的大烤盘，专门烤火鸡用
的，问题是我只烤过一次火鸡就不想再弄了，现在主要用它烤鸭子。:) |

southerners only make "hun tun". the dumplings with open mouth and soup.
The dumplings has to be thin skin layered with heavy stuffing to be good
dumplings. The small spoiled kids sometimes even dont eat the thin layer,
but only the stuffing.
The stuffing mix is very important to make good dumplings too.
Besides, the best skin layes are the original hand-rolled. |

俺今天来上个烤鸭注解版吧，半年前写的一个豆腐块。这个方子参考了N篇网上著名的方子，写得比较啰嗦，列出一些可能替代方案，列出烤鸭失败的原因分析。

【食材】
烤鸭一只，4～7磅重。
【器材】
1、烤箱。估计大部分人都用传统烤箱。也有人用方便烤箱的。没烤箱，就别diy烤鸭了，去买着吃伞?
2、烤盘及rack。最好是1个rack和2个烤盘配套的那种，walmart有卖的。rack架在烤盘上，能够让烘烤过程中流下去的鸭油不与鸭身直接哟ァＨ绻挥胷ack的话，鸭子容易浸泡在鸭油中，这样鸭皮就烤不焦脆。
