was driving an Amish horse-drawn buggy in northeast Ohio has been ruled a

发帖数: 92 | 45 看网上的做法,似乎很简单的东西,结果做起来还是费了点工夫. 主要是内馅的部分一直
不太满意. 最后找到了君之的博客, 他介绍的奶油馅果然和外面卖的一样,诀窍就是在卡司达馅
里面再加入打发的鲜奶油.
简单说下做法:
皮: 1/2茶匙盐, 1茶匙糖, 2大匙油(色拉油就可以), 3/4杯低筋面粉, 160毫升水, 4-5
个鸡蛋
把除鸡蛋和面粉外的所有原料用锅烧滚, 然后将面粉筛入, 把面粉烫熟.
冷却以后,分批加入鸡蛋液, 直至用筷子挑起面糊时, 面糊可以挂住成倒三角形.
把面糊用勺或者挤花器分布在抹了油的烤盘上, 400度烤10分钟, 再换成375度烤15分钟.
馅: 1/3杯糖, 3大匙低筋面粉, 300毫升牛奶, 4个鸡蛋黄
用锅烧至浓稠沸腾, 这个步骤我后来发现用微波炉更好,因为不用一直搅拌,不会烧焦.
微波炉二十秒一次, 然后取出搅拌均匀, 再重复直至浓稠, 象厚一点的浆糊.
完全冷却后拌入打发的鲜奶油, 用挤花袋挤入烤好的泡夫内, 记得转动一下角度,这样
可以挤入比较多的内馅.
开吃吧! 美味无敌,堪比 Beard Papa's ! 呵呵... |

面团要使劲揉。我不知道你是用手还是机器揉面。我一直是用手揉的。因为用手揉，很
少有overknead的时候（用手揉不超过15分钟）。虽然家里准备买一个kitchenaid，但
是我最后还是否决了“提案”，因为机器揉，可能会overknead，破坏面包的口感。揉
不到windowpane test的效果，你也不用着急啊。面筋自己会随着发酵过程产生（我照
片中给的最后发酵完成的面团，其实就是靠有那一层面筋，所以怎么发酵，它都不破。
）。我以前也担心过这个问题。因为我用的面粉基本都是all-purpose flour（James
Beard的方子都是用all-purpose flour）。我害怕口感没有bread flour好。后来觉得
在此款面包里，用什么面粉也没有什么差别。有的面包，用好面粉，确实口感不一样，
比如意大利面包。
简单和在一起，肯定是不行的，因为面团根本没有smooth，所以它自己不会产生面筋的
了。

奶、酸奶、豆奶、buttermilk.就是没有看过加heavy cream的。初学做面包的时候，曾
经向周围的美国面包达人请教可以不可以尝试heavy cream放入面包。但是他们似乎没
有这个习惯，不过对方给我建议，用buttermilk尝试一下。
我曾经看过beard on bread这本书中介绍，他家里的一个多年的中国厨子，竟然将
heavy cream放入饼干的recipe中。
请教在座的达人，有谁知道heavy cream放入面包或者饼干中的作用。
白人吃了这么多年的面包和奶油了，不将奶油放入面包一定有它的原因。
