发帖数: 218 | 2 俺觉得海绵和戚风是国内人的定义非常模糊，在美国这边一般超市蛋糕房都写sponge cake，甚至
是一些香港饼屋卖的那种paper line cup sponge cake（纸包海绵蛋糕，不是美国的那个纸杯
蛋糕cupcake，我记得前段时间版上有个mm问过说很好吃但不能天天跑去中国城买）。如果按字面翻
译过来这个是海绵蛋糕，但实际是口感我吃起来非常柔软轻盈，应该是chiffon。我还专门去问了卖
这个蛋糕的香港烘培师，他就是用stand mixer全蛋打发的，成分是全蛋，多加一个蛋黄，粉，
vegetable oil。回来查了，这样又好象是国内的清水蛋糕，如下链接：

可是这个明显是分蛋chiffon做法。只是没有放水。
但是我吃上面的香港饼屋的那个全蛋打发的纸包海绵蛋糕（如果按国内定义和标签英文

算是chiffon，对伐）

第一季的X Factor电视歌手选秀比赛节目落下帷幕。在比赛结果出来的前一天，电视新

cream cheese 一块 8oz
水 半杯 4oz
白糖 2勺
vanilla 2勺

4cup mayonnaise, 1/2cup水，搅匀，放冰箱里半个小时，用刚才1/4cup把混合物挖出
来做成cake，拍扁，下油锅煎。油温不要太高，因为蟹肉本来就是熟的。两面变成金黄
就差不多了。跟红龙虾的crab cake味道差不多，很多蟹肉，比超市卖的速冻的料足，

后加盐，白胡椒，黄豆芽，再煮20分钟，临出锅前加葱花。
小的时候妈曾经做过鸡蛋，粉皮，蒜苔一起炖的一种大锅菜，吃的时候就这馒头，大口
大口的扒着吃，都顾不上说话......事隔多年，已经没有那种迫切，但是做来，更有记
忆的甜味。
热锅，炒香姜葱，捞出，炒蒜苔变色，生抽一点，盐，白胡椒，放入泡好的红薯粉条，
一杯水，开锅后打入两个打散的鸡蛋，蛋熟就好。
昨天吃了干锅蟹，好像没吃够哈...虽然没有螃蟹了，虾来凑～～
做法跟干锅蟹雷同，只是加了鲜笋。
大虾，去虾须，虾线，用盐，料酒腌20分钟。
热锅，中小火，炒香花椒，干辣椒，八角，放入蒜块，姜片，洋葱，炒匀，放入虾，炒
红，加入郫县豆瓣酱，糖，米醋，生抽，莲藕，鲜笋，西芹，1/3凉水，盖盖子焖10分
钟，出锅前加入青葱拌匀就好。

我家小孩的老师准备了个彩纸做的王冠，写了小孩的名字和年纪，还准备了小蜡烛

Cake games are much, much easier than Merge. I focus on MTTs. My BB/100 rate
at Cake is 2.5x that at Merge. Cake players make all sorts of terrible
mistakes all the time. Hope the transferred Lock players wont screw up the
party.

of how stinky my cash game is. From stars to FTP to Carbon to Cake, I tried
cash games many times and I never got any positive result. I was not even
able to beat the softest Cake field. :-( So I gave up and started focusing
on MTTs. Bang! MTTs are much, much easier. For example, without much efforts
I got 30BB/100 rate over 30k hands at Cake. I would have left poker with a

slices per tier, so a total of 18
wedges.
I used a different fleece like material for the white part of the cake. it's
softer and I got it from Michael's. |

structure.
I used USPS priority boxes (free from post office!)
I stuff them into the cakes, and then stuff cotton inside, then stitch the
bottoms of the cakes up. |
