且对于制作pizza的奶酪，无非觉得那种可以拉丝的奶酪很有趣，以及吃之前撒的那种
芝士粉，很香很好吃~
来了美国，学校里举行各样活动前后所提供的点心里，常常可以见到各种奶酪的身影。
开始的时候只知道根据颜色来区别，可是没过多久就发现不对，即使是同样的颜色，可
是香气，味道和口感的差异都很大，有些非常好吃，有些则很不习惯。吃货的好奇心立
马就被勾起来了，之前不是提过那会儿经常看Food network的各种Cooking show么？特
别让我感兴趣的，一个就是各种香草料的作用，这已经在薯条爹写的《草本篇（上）》
和《草本篇（下）》中提到过了。另一个关注的重点，就是不同奶酪的各种区别。真可
谓不学习不知道，一学习吓一跳，原来奶酪可以有如此多的讲究！品种之丰富，口味之
多样化，让人大开眼界。这边很多出售奶酪的商店都会提供免费试吃的机会，不仅可以
尝试各种不同品种的奶酪，那些热情的服务员还很乐意跟顾客聊有关奶酪的各种话题，

，都会很棒，因为cheese融化后非常香！！！
ls 那个cheese sandwich热量不高，两片全麦面包200卡，一片sandwich cheddar
cheese 50卡，总过是250卡左右，需要补充些其它东西才能吃饱。
toast的话面包会脆点，现在我喜欢用最最简单的方法吃到我最爱的早餐，把cheese
sandwich放微波炉里，20秒，面包软软的cheese全部融化，一口下去美死了，根本不用
花任何时间！
cheese的吃法太多了，主要是太多种cheese了，做pasta，例如最爱的cheese macro，
lasagna
做披萨，或者改良版的披萨，ricotta cheese可以做 很多甜品填料，非常棒，cream
cheese夹面包里吃，还有做salad里面可以放点cottage cheese
不过，我是不能每天吃太多cheese，长期不习惯，消化不好

最早是因在小木屋（Cottage）里制作而得名。可以搭配新鲜水果、果酱或者糖浆吃，
也可以加盐、黑胡椒、各种蔬菜或者放入沙拉中食用。从质地上来说，有小粒（Small
curd，未经过Rennet处理）和大块（Large curd，经过Rennet处理）的差别，前者更常
见，味道略酸一些。今天的两款Pancake都是用这种Small curd cottage cheese制作的
，一款保留了颗粒的质地，另一款先打碎再制作，口感差别较大，但是一样香浓可口。
Cottage Cheese在制作的过程中因为没有经过脱水和陈化，味道要温和得多，觉得“奶
酪”有怪味而不喜的朋友不妨试试看。

后来习惯了，比如pizza上的Mozzarella，也挺爱吃。
自己有时候也会买cheddar，在grill下烤一下吃。
在西人同事家吃过不同品种的cheese，我可能比较喜欢smoky的那种。不难吃，但我自
己不会买，因为不是特别的热爱。
上周去盛产cheese的瑞士，朋友starter点了个cheese board，量巨大，反正我是无法
理解那些一顿吃那么多cheese的人的。高热高蛋白，理论上说一小块就够一天的脂肪量
了（别和我说脱脂cheese），非常香，但很快就腻。最后果然，他扔了大半。

个朋友过节的时候做的，也是有史以来最好吃的cheese cake ,她用了差不多十种
cheese ，但是我并没有问她做法，所以自然不知道她用了哪些cheese，每次去饭店都
要看看点cheese cake，但是没有一个能比上朋友做的，昨天晚上下决心自己试一试，
结果证明，下决心的人会成功。
cream cheese 一块 8oz
水 半杯 4oz
白糖 2勺
vanilla 2勺
鸡蛋两个
sour cream2勺
butter 四分之一条 2oz
面粉 半杯3-4oz
用微波炉把水打热，放入cheese 搅拌，直到cheese完全溶开.........
加入butter 搅拌........
加入vanilla继续搅拌..........
加入sour cream继续搅拌..........

McDonald's and people seemed to like it and repped for it. So I thought it

So I like having real cheese on my burger at McDonald's. The Angus burgers
have real cheese, but I don't like the taste of the Angus burgers, and they

刚wiki了下，果然连cream cheese都是属于fresh cheese的一种额。。。

【原料】：草莓、坚果、mascapone cheese、黑莓蜜
【做法】：草莓洗净，头尾各切一刀，将中间的果肉挖空，大头朝上放在盘子里，草莓
肚子里填入坚果；mascapone cheese和黑莓蜜打匀，填入用锡纸折成简易挤花嘴，当然
用专门的蛋糕挤花嘴更好了，我没有专业装备，只好因陋就简。用cheese填满草莓里剩
下的空间，cheese要多放味道才足，所以一定要堆满杯口哦。杯口外溢出的部分可以充
分发挥创意，如果有专业蛋糕装饰装备的话可以把cheese调成绿色，挤出草莓叶子的形
状，这样看起来就像一盘真正的草莓了呢！这道“草莓芝士坚果杯”，就像一个个小小
的草莓芝士蛋糕，草莓的香甜和mascapone cheese的柔滑口感竟是绝佳的搭配，极致的

CHEESE（PS,我记得light一般指脂肪，不是指盐的含量）。
刚开始上CHEESE，推荐cottage cheese，或者cheddar, 据说容易接受一些。COTTAGE
CHEESE可以化在蔬菜上，也可以BLENDER打成酱。

所以protein含量特别少。
举个例子，同样是soft cheese，100g brie含protein 21g，
这个是正常的cheese的protein含量。
但是100g cream cheese只含protein 7g。

cottage cheese，没吃过cottage cheese的可以想象在cream cheese和greek yogurt之

就放在冰箱里了，然后不到一个月就发现cheese边沿长大片的绿毛。包装上说
expiration date是2012年三月，并没有说开袋后多久吃完。我非常困惑的是cheese到
底应该如何保存，我以前买的普通的卡夫cheese片在冰箱里多个月也还好的样子。我应
不应该找costco问问是不是cheese质量问题呢？ |

另外推荐wholefoods的 cheese，季节不同口味也会变化一些，吃过有桃子啊，
cranberry啊，jalapino之类的都好吃。。。
去年生二宝的时候后期淀粉和糖都要少吃，于是转战cheese，每天换样吃，很顶饿，
snack time 基本都是cheese， nuts， 干果类，再加杯咖啡。。天气要变冷了，我的
cheese季节要来了，哇咔咔。。。。 |

If you like chip and salsa, then one way is to eat like this: spread cream
cheese on the chip, then add salsa on top, and enjoy.
Some good cream cheese:
Salty: Philadelphia Soft Smoked Salmon Cream Cheese.
Sweet: Philadelphia Whipped Mixed Berry Cream Cheese.
And with those, you can just spread them on almost anything, bread, bagel,

that he responds positively to, there are cow's milk (highly intolerant) and
egg (highly intolerant). We are designing his diet patterns, but we are
having a hard time figuring it out.
In his report, swiss cheese, cheddar cheese and milk are listed separately.
He is only positive on milk and swiss cheese, but not cheddar cheese. What
is the difference between these different kinds of cheese and the milk?

swiss cheese杀过菌的。
主要指的是进口soft cheeses：brie, camembert, Roquefort, feta, gorgonzola,
some Mexican style cheeses that include queso blanco and queso fresco.
看标识，用pasteurized milk做的cheese都没问题。
超市买的都可看标识，去餐厅吃饭要问侍应生是否是pasteurized，或者记下上面列的
那些cheese名称。 |

发帖数: 1663 | 44 昨天买了POLLY-O牌子的string cheese,牛皮糖一样，太淡了没有cheese味道，还很咸。（没有牛皮糖好吃，像嚼塑料）宝宝非常喜欢吃cheese,对string cheese好像反应一般，她21个月，估计对她来说还是太硬了，看来得换个别的试下
由于太硬，我用微波炉转了下，化成一滩，我想终于可以吃软软的了，没想到一吃，就
跟嚼没有味道的泡泡糖一样，我鼓足勇气才生吞下去了，太可怕了。。。
店里试吃的cheese都挺好吃的，有的还加了火腿辣椒什么的，改天去找找
对了，宝宝每天最多可以吃多少盐？ |

用的cheese是低盐的，而且他们家种类居多。
cheese的确含盐量挺高的，所以要仔细挑挑。小孩子啃的string cheese一般是
mozarella cheese，还有swiss cheese也常吃到。 |

其中一种叫tomme fermier d'alsace的，法国的，不算太硬，味道也mild可口。旁边一种
意大利的味道更冲，更硬，吃上去更像嚼蜡。还有一种上面长白毛、下面有霉点的更软，
但奶味好像不重。买回家才发现盒子里只有一块斜三角，只占盒子的一半体积。8oz，近八块钱，好贵啊。比超市买的尤其是片装的cheese贵多了。我平时几乎不吃cheese，吃一点就吃不下了，也没有特别的喜好。家里的小孩倒是喜欢吃。你们吃不吃？喜不喜欢？我有个卖红酒的朋友非常喜欢，对各种cheese头头是道，什么cheese应该配什么酒。有研究的朋友有空来聊聊。可以算征文，日常的吃喝玩乐大家随便交流。 |

有时候开会reception, 经常是越好的会议里面的cheese越难吃。。。cheese 口味每个

cheese条的，偶觉得真幸福，偶们小时候吃个鸡蛋都美半天。偶们公司里好像cheese不
断的，反正偶抓到啥吃啥。给偶一碗无论啥cheese只要跟偶说不算今天的热量配额，偶
能全给吃光了。 |

发帖数: 368 | 50 谢谢公主推荐。今天就去TJ买了blueberry goat cheese, 后来又顺便买了fat-free
crumbled feta cheese。回来无聊，就把公主介绍的和我自己常吃的cheese放在一起比
较了一下，就减肥来说，居然trader joe's的feta cheese完胜，相同热量的情况下，
没有fat，蛋白质和钙含量最高。不喜欢吃cheese的也许可以试一下，放salad里混着吃。
