刚开始学习烘焙,想做蛋糕,但看到大家的方子都是要用cake flour做的,可是我跑了
好多超市,都没有找到cake flour,只看到bread flour、all purpose flour、
unbleached flour,还有whole wheat flour~~~
怎么办呢?没有cake flour是不是就不能做蛋糕了?呜呜呜呜~~~可以用别的什么flour
代替吗?
为什么我会买不到啊。。。难道Houghton的人都不做蛋糕的吗?

刚刚google了一下, 貌似pastry flour蛋白质含量略高于cake flour, 但大部分情况
下通用也不妨,或者混合all purpose flour与 cake flour 来自制pastry flour. 不
过我自己从未做过cake或
pastry,只在店里见过这两种flour,所以好奇地问一问。

Pastry flour is a relatively low-protein flour that is often called for in

Bread flour,12% to 13% protein,

unbleached flour 和 bleached flour 有什么区别, 为什么有的面包方子上写
unbleached flour,我用的都是Costco买的bleached all purpose flour,味道上面会
有差别吗?

高筋粉(bread flour):
蛋白質含量約由 12.5% 至 13.5%。通常蛋白質含量在 11.5%以上都可叫做高筋麵粉。
蛋白質含量高,因此筋性強,多用來做麵包等。
中筋粉 (plain flour/all purpose flour):
蛋白質含量約 9%至 12%左右。多用於製作中式點心: 如包子、饅頭, 中式麵食,餃
子皮等。
低筋粉 (cake flour):
蛋白質含量約 7%至 9%,筋性比較低。適合做一些鬆軟蛋糕,例如戚風蛋糕。
中筋粉和粟粉的比例是 4:1. 4:1哈

Of course you can. The result is less desirable but you can add other high-
gluten/面筋 ingredients (such as barley/rye flour) to compensate for it.
You can also use all purpose flour to replace baking flour to make cakes but
bread flour will usually fail at cakes.
Allergic to corn starch could due to GMO corn. Look for "Bob's red mill"
brand. They sell non-gmo corn starch.

如果是同样的wheat, 去麸皮的比不去麸皮的便宜,谁还生产去麸皮的?
估计是不同的wheat了
那么,做 wheat flour 的wheat, 为啥不适合做 wholegrain wheat flour呢?

sorry for being late. I just made it again and took some notes
step 1. get 200g milk (roughly 13/16 cup) from refrig, heat in microwave
oven for 2 minutes. The milk should not boil but it should be hot (hotter
than warm)
step 2. use a stand mixer, use the flat paddle hook (a.k.a. cake hook, it
looks like this: http://standmixerreviews.info/wp-content/uploads/2011/08/kitchenaid-flat-beater.jpg ) add 100g flour (roughly 2/3 cup), let it run at a middle speed (6-8) for 15 minutes

If you just bake occasionally you can buy the 5lb bags. If you want a lot of
flour you can buy directly from the farmer which is usually in high quality
than the grocery stuff. For example, here:

If you are opening a bakery and want huge amount of premium flour, I suggest
you invest in a good electric grinder and buy bulk wheat in thousands of
pounds and grind flour to your liking.

purpose。

注意事项
As you see the method is a modified 汤种法. Same result without the mess. So
the temp of milk in step 1 is important. You need to get the milk to a bit
higher than 75C since when you pour it into the mixer's metal bowl it will
cool off a bit. I tried to boil the milk and the result is not as good.
At the end of step 4, the dough is a bit sticky, and very soft, that is ok,
no need to add more flour. You may adjust the amount of flour in step 4 to
your own taste

虽然这两个比较容易区分,
可我还真分不清啥是糯米 啥是粘米
尤其超市里经常卖韩国 日本产品,
真是搞不清楚。
你的这个简单,去美国人超市买 all purpose flour,
他们省略了小麦粉字样。
中国人的超市里就麻烦了。
糯米和粘米粉
土豆和地瓜粉
各地的称呼都不一样
比如 生粉 是啥?
太白粉是啥
三象牌的水磨白粘米綕粉是啥?
还有很多,
很晕菜。

原理不知道。我猜想的是all purpose里含中等程度的gluten,corn starch里没有
gluten。然后你的目标cake flour是低筋粉,low gluten。你把中等gluten和没有
gluten的两种粉混一混,不是正好得到low gluten吗?
效果差不多吧。当然我比较迟钝,小的差别也吃不出来……

我用self rising flour 做过蛋糕,口感介于发糕与馒头之间,反而是我喜欢的,缺点
是含盐,要放挺多糖才能盖住。
