中式菜刀的问题是啥呢,因为设计比较大和厚重,用钢多
真正用好钢的好刀价格就会比较高
比如shun classic的chinese cleaver都要卖到小两百
所以同样的预算,除非到三百以上或者干脆不差钱,
你买chef(也就是gyuto,"牛刀")/santoku("三德刀")/nakiri("菜切"),
能买到比中式厨刀更高性能的刀
在150刀左右的话,如果锋利是第一选择,
那我就推荐前面我贴过的6.5寸akifusa nakiri
用san mai粉末冶金的钢,洛氏硬度到64,刃角又小,锋利绝对够用
出厂拿到的话,切土豆应该是一刀下去,如果下刀角度正确(垂直),感觉不到阻力
磨一次能管大概一年的样子

To me, these two have fundamentally different mentality, kinda of similar to
the disagreement over mutability of variables between OOP and FP.

我们就是坐在吧台,有一个chef专门serve我们
吧台那有一块小黑板,写着today's chef choice。 可能有当天的新鲜的特别的鱼。
好多都是local fishermen 刚抓到卖给他们的。
我就是跟着吃,都叫不上名字来。只记得一个活虾还两吃。肉给你吃sashimi。 头可以
作成tempula 给你吃,也可以做成 misa soup给你吃。
下次你做在bar台吃?,那里一排有10几个chef,一边吃,一边跟他们聊天。他们就会
做他们觉得最好吃的咚咚给你。大概就是所谓的chef's choice, 由serve你的那个chef
决定的。坐在table就没有这个待遇了

咱们既然吃得不多,要吃就吃些新颖的,精致的。生命挺短暂的,在减肥的同时也要享
受生活中的各种美好,适度就行。
restaurant的名字叫Blue Hill, Manhattan和Westerchester各有一个店。Owner and
Chief Chef叫Dan Barber。我曾经碰巧听过他的一个talk,是关于green engergy and
sustainable farming的。他人挺有趣的。他的cooking style是:最标志性的特征就是
innovative,他家的menu很特别,很多都是他自己首创的innovative dishes。原料都
来自他自己在westchester的farm,全部organic and fresh;而且他主张good food
must be delicious。他曾在Bravo台的一个厨师比赛的节目里出任评委。

雅轩没有湘菜的那种干和香。
雅轩的厨师和chef ping还是有差距的,炒个青菜差距就出来了。
我觉得chef ping的水煮鱼是和老四川齐名的top 2,不同风格,老四川更贴近国内,
chef ping是改良版。
chef ping的夫妻肺片,毫无疑问是我心目中的#1,好吃到要死。
雅轩的酱爆茄子,是我在饭店吃过的最难吃的,当然比我老自己做的还是好吃点。
客观的讲,雅轩的厨师,做菜更像是家庭式的,状元楼的厨师虽然也很烂,但是起码看
得出是科班出身,起由,和摆菜,都是专业的。
BTW,状元楼最近的台湾牛肉面有改良,so far可以和麻婆一拼。面条直接beat麻婆,
汤料还是差一点,形似。

对了,chef ping的回锅肉是全芝加哥最差的,不是肥瘦相间的,反正雅轩这道菜做的
还行。

不知道现在chef's table价钱怎么样了。我去年好像90一个人。非常非常值。至今常常
怀念。
越早上船越好。一上船马上打电话订。我当时在吃饭的大厅里随手抓了个看着顺眼的帅
哥问,结果那帅哥正好就是chef's table的waiter,直接就帮我们打了。当天下午俺还
去见maitre D,主要是要求给桌子,因为我当时订是last minute,便宜是便宜,不过预
订8点吃饭的桌子没了。不过顺便问他能不能给我们chef's table,为了能拿到,再三和
他强调我们大老远从中国来玩,多么不容易。

就是foodnetwork每个礼拜六的Iron Chef。
那几个铁厨做菜花样百出,真难以想象
一个小时里能想出这么多东西。
我最喜欢中国铁厨(of course)陈建一,
他不在乎菜好不好看,只重味道,号称靠
一道中国四川的hot bean sauce无敌。看他做菜
经常fry, deep fry, 口味重,h看着就是与大增:)
法国菜铁厨坂井宏行就是完全不同的风格了,他
每次都做比对手多一两道菜,菜非常简单,主要精力
都放在色上,那些才看看都赏心悦目,就不知道
够不够吃了:)
最后iron chef谢幕战king of iron chef也是他和
陈建一大战,可惜中国铁厨败了。
日本铁厨道场六三郎没什么特色,古板老头一个,
也没什么人挑战他。
后来的日本铁厨morimoto比较狂傲,有一次在
iron chef new york battle和现在那个food channel
的bobby ekley(?)碰上,狂贬对手,大快人心:)
铁厨好像从95年就开始了,到今年结束,国内以前某个节目
也搞过厨师比赛,不过没有这个真实。

还在看Chef的文档,说说我的想法,不对的地方请指正。
我的理解是Chef是用来devops自动化的,将特定的场景脚本化,以达到节省时间的目的。
比如我现在有$150 * 5/月的azure credit,每个$150/月可以按照Instance的配置来做
不同的划分。我目前想做的一个项目需要40个XS (extra small instance)来做crawler
,1~2个M (medium instance)做controller/database server,用Chef的话就可以把这
些安装ubuntu,配置这样繁琐的工作脚本化。以后转到EC2或者digitalocean也比较方
便。
我主要在Mac上开发,chef怎么进行包管理还没开始研究。vagrant没用过,是用来在本
地测试包管理的么?

So I have a mongodb server cluster, now I want to upgrade newrelic agent on
them.
Use docker, I have to redeploy, restart, and need maintenance time.
With chef/puppet, I just push the change and it will be done in next chef
run. no down time for production.
Right, "The bottom line is that they are mutually incompatible". So in dev
ops area, docker is not game changer, as it only cover part of the things we
want to do, it does not change the game..

厨房里面装一个2米的fume hood,多大的油烟也不怕老人抱怨美式厨房没有门,搞得家
里到处是油烟。Hood旁边放一温控摇床,酿个米酒,绝对容易。一套蒸汽灭菌锅炉,那
是必须的,保证每次发酵成功。储存市里面丢一套真空泵,连上双排管,(对,就是
chemglass牌的,post dog都认这牌子)对,还要附上氩气罐(氮气太便宜,不要)你说
要这设备干什么?连上真空箱,炸好的馓子、油条放里面,先上真空,然后氩气一直通
着,一万年后拿出来都脆蹦不坏。这不比大农村华人超市里面的冰冻油条强太多了。
老美的自来水还不够好,等上净水器,什么? PUR是名牌? 那多不专业, 要上
millipore的一整套,什么离子交换树脂,UV杀菌,0.22um过滤,一个都不能少。一测
电阻,哟,18.2M欧姆,看这数字就知道它够纯,喝着那个放心加舒心啊。瞧这水软的
,洗衣服还省肥皂呢,丈母娘一定喜欢。
咱有钱了,那么用盐就要讲究一个字,纯!不要被什么天然海盐糊弄,谁知道里面有些
什么重金属。sigma 99.5%的NaCl还不能彰显咱有钱人的气势,要上merck 99.99才好。
